- Soak Beans over night . Then cook in water for about 35 minutes. Then after add all ingredients and cook for another 40 minutes. Make sure the beans are tender. Make sure to dice ham, potato . Carrots what was I thinking , I usually dont put carrots.. Crazy me, lol so you can leave them out or dice them very small. I did it a bit bigger just to give you an idea. but smaller is better. The key is the pumpkin (it cuts the acidity of the tomato sauce - which I use 1/2 can). Buy the small pumpkin such as a butternut. Speaking of the tomato sauce, use a salt-free option. The HUGE amount of sodium in the regular tomato sauce can ruin the taste.

Love it that you include and respect your mom. Actually...I've watched quite a few of your videos...and other than you SAYING that your mom is involved...I never see anything wrong with your videos. Ever. And sure, you may have to edit...but...the recipes are good, I've made a few and got compliments...and I'm thinking that your mom eye-balling you while you cook keeps you on the straight and narrow...lol. So, a few out of focus shots...can so deal with it to get an excellent recipe. Thanks for posting your recipes. It gives me diversity in a world where my husband want's ONLY rice...lol. Take care.
Pink beans are my absolute favorite of all beans and, when I make them, I can eat them by itself with nothing else. I love them! This recipe looks yummy, too. I've never added carrots or pumpkin, but I will give it a try next time I make it. I like to fry two pieces of bacon to render the fat and add a tablespoon to the beans for extra added flavor. Sometimes a girl has got to be a little adventurous with the taste buds...YUM!!

What is the name of the orange powder ingredient you added to the beans? Is it something like Sazón? Looks and gives the beans an amazing color...I usually use Sazón con Achiote; however, I prefer not to have my beans look red when I cook pink beans. They're still tasty, but I prefer to have less of the red coloring in my salsa. Would you be kind enough to advise? Thank you.

What, exactly, is cooking ham? I've seen it referred to in this recipe and others, but have never seen any product specifically labeled as cooking ham in a store or online. Do I need to go to a latin market or could I just use a smoked ham hock or 2 and pull off all the meat and add it back to the beans? Or maybe a nice smoked slab bacon diced? THANKS to anyone who can help!

Turkey bacon is a good alternative.
Smoked Turkey ham is the best thats what I use and comes out incredibly tasty

always toss out the liquid in the can wash out the beans real good.
Hey Jenica. Although Mugzy states to toss it out, (and to each his/her own), when I have made beans from a can in a pinch of time not being on my side, I ALWAYS cook it WITH the liquid included. I figure that, with all the other seasonings/veggies I add to it, and the beans coming in the liquid they were prepared in at the plant, it's just an extra added flavor feature that shouldn't be tossed, but incorporated with everything else, and it also gives it a bit of its own thickness before the papas and everything else you include in it. The only way I'd rinse the beans off is if I were going to add them to a salad. Feel where I'm coming from?

I fry bone-in ham in a little oil, preferably annatto oil and then add the sofrito and salsa and cook that off. I like your show, but grandma just didn't make it that way and neither would I.

l screamed when you peeled skin of pumpkin leave it on. Carrots really? We Puerto Ricans don 't put carrots when making habichuelas guisadas. We use them in stews and salads but not in habichuelas guisadas.
