In case anyone is looking for that authentic bowling alley nacho cheese flavor, if you add some jarred jalapeños and (most importantly) at least a tablespoon of the juice from the jar to your cheese sauce you won't be disappointed :)
As a Spaniard, I think that these TOTCHOS not only look delicious, but they have a genius name. In Spanish it reminds of the word TOCHO, which means a big chunk or weighty amount of something, originally a thick heavy book.
Once when I was slightly medicated I made a cheese pizza topped with fish sticks and more cheese on top. Had a bowl of tar-tar sauce for dipping. At the time I tasted really good. These Totchos do look really good but a little complicated for quick munchies.
That tater tot mound reminded me of the scene in CLOSE ENCOUNTERS OF THE THIRD KIND where Richard Dreyfus' character is making the mound of mashed potatoes. Not quite identical, but still, it's a mound. The tater tots look great. Thanks. Merry Christmas to all.

Loved this video, and Tots are King, but hey what about a episode on how to make the best use of left over tortillas? Recently I made enchiladas with Sun-Dried Tomato tortillas and had 3-5 left over. I heated a skillet, fried the tortilla on both sides then added eggs bacon cheese chives, etc.... once the eggs firmed up and the cheese got melty folded ... topped with condiments, and wow ... !
We make an Irish Tatchos each year on St Patrick’s Day with some corned beef and sauerkraut along with usual nacho toppings. Not exactly traditional Irish food but always a huge hit with friends that join us to party Irish style.
I make potatchos when I make too much taco meat and run out of tortillas or chips. Just potato rounds instead of tortilla chips. Then make nachos as you normally would . Truly a delight that also stretches the budget.

Sam, I highly recommend buying the solid plastic lids to fit your Ball jars when quick pickling. They're also great to have on-hand when dealing with opened traditionally canned product. A bent jar lid is never a problem when closing quick pickles or already opened traditionally canned good.
For those of you playing at home, Velveeta isn't "cheese." It is a "processed cheese food product." It is best consumed when one is drunk or stoned, I am told.

I’ve found that if you cut the lid off the can the other way you don’t have a ridge. And a bit of pressure from the top and heat helps it… solidify (I hate congeal as a word but anyhow).. Great as always
You can do crispy tots in the air fryer you just don't want to pack them in a single batch but do multiple smaller ones with shaking at the half way point
Two thoughts- the cheese sauce could be a little thicker to make better glue, and spray the inside of the can with cooking spray for a cleaner release. In the end I think Chance is right, the pile presentation is better.
I could see it holding it's shape a lot more if there were some sort of tall spring-form cylinder (like a skinny, tall cheesecake pan) that you could just release all at once.
You should have used some shredded cheese in between the layers to really glue it together. The nacho is not gooey enough to hold it together. Give it try, it's Great!!!!

It was a great idea, Sam! You just needed to use _more_ Cheese Sauce between layers. If it's gonna be the glue, you need to slather it on there to bind the whole thing together! Bet it tasted delish. You guys really are the best cooking channel on UA-cam!
But it's sauce not cheese. With all that milk poured into it, it is going to stay slippery and liquid. Especially since it is not actually it's cheese it's that gelatin like Velveeta stuff. Awesome for using on grilled cheese sandwiches & nachos! Dang it now I'm hungry!!

I make my totchos with smoked pulled pork, bacon, shredded cheese, sour cream, jalapeño, green onions and drizzled with bbq sauce.
Shout out to the Palomino in Milwaukee. Totchos were the number one seller!

Maybe compress the mixture a little before removing the can. I would use the cut out lid and a magnet with a hook on it to press-n-pull.
You need to get one of those can openers that takes the whole top and leaves nothing sharp. We can't afford to lose you lol
