- We are making Sugaki, oysters marinated with ponzu sauce. Enjoy this simple, delicious Japanese-inspired way of eating fresh raw oysters. You should definitely try this recipe when oysters are in season. It is so delicious!

120g Fresh Oysters intended to be eaten raw (4.2 oz)
Ponzu Sauce

2~3 tbsp Grated Daikon Radish
Chopped Spring Onion Leaves
Ichimi - Red Chili Powder
* 1 tablespoon (tbsp) = 15 ml, 1 teaspoon (tsp) = 5 ml

Raw oysters taste AMAZING, it's a really fancy meal in Europe, usually at Christmas time. You open the shell with a special knife, remove the water, then add lemon juice or balsamic vinegar. It's one on my favorite meal ever.

The taste will be different, but please give it a try! When making hotpot dishes with oyster in them, I often enjoy the cooked oyster with ponzu sauce, so it should taste good :)

I really like how the Japanese cuisine emphasizes on the natural taste of the ingridients and don't cover it with excess amount of spices and salt like the Chinese cuisine.

It's the texture and temperature, I think. Cold and soft and a little bit slimy can be hard to overcome for the uninitiated! I have trouble with raw oysters most times too, but every once in a while, I'll be brave with one or two. This seems like a recipe worth the bravery!
Chef often uses oysters grown in Seto Inland Sea (ex. Hiroshima, Oyayama and Hyogo Prefecture). :)
