- Hey loves!! It's here!! episode #3 of the vegan rican!! I've been working on this one for quite some time now. It was a bit of a challenge as it is my first video where I'm not the only one on screen! yup, this episode features my amazing mom!! she's my rican half🤗 This recipe is 100% hers and I'm so thankful and blessed to have a mother that is vegan as well as an amazing cook. What she learned back home in Ponce PR was always apart of my life growing up. Lets show her some LOVE, she was shy and nervous but just wait she'll get better 👍🏾
Ingredients
Yuca (cassava) mix
2 large yuca (peeled and processed) or 4 Cups already processed
6 Tbsp of sofrito recipe→ • Ep #1 the VeganRican |...
1/4 Cup of vegetable broth
1/2 tsp of salt
1 pack of sazon #goya
1 Tbsp of infused oil ↓
1 tsp of adobo #goya
annatto infused oil
1 Cup of unflavored oil
1 Tbsp of annatto seeds
Stewed veggie meat
1/4 Cup of potatoes (peeled and diced)
2 Tbsp of sofrito
1 tsp of adobo
1 tsp of infused oil
1 pack of lightlife grounds
1/4 Cup of veg broth
1/2 tsp of dried oregano
2 Tbsp of sliced Spanish olives
1/4 Cup of tomato sauce (unsalted)
frozen or fresh plantain leaves
KETCHUP!! THIS IS A MUST HAVE!!

I am of Colombian descent and despite turning vegan being the best thing I have ever decided to do, I miss Hispanic/Latin food along with my mother's cooking. I'm from the Before Ketchup generation. We would use a bit of olive oil or pique. You may also try it with pico de gallo.

Thank you so much for posting these videos! I'm Indian and my boyfriend is Puerto Rican and I've been trying to find a good way to connect with his abuela through cooking. She's had a hard time trying to figure out how to cook something for me without meat, so being able to share these recipes with her (and hopefully cook them together) will be so great! Also, I'm gonna try and make them for my boyfriend as well :)
P.S. What's the difference between these and pasteles?

I’m so glad your enjoy the series and I know your bf and his family will really appreciate you for taking the time to make food from their culture!! ❤️❤️❤️ the difference between theses and pasteles is that these require far less work as the outer portion is made of only yuca. Also pasteles require more work to prep for cooking but honestly they taste very similar 👍🏽

I have not made these but I do make Pasteles and this just looks like a different way to make Pasteles. Not sure why they call them Empanadas as Empanadas to me are different and I am Puerto Rican. They do look good though. Empanadas to me is a dough shaped like a disc that is filled and then deep fried.

I've always made my empanadas de yucca wrapped with the plantain leaf and then wrap with aluminum foil, like a pastel (without tying it). I'm making them for Thanksgiving this year, so will try without the aluminum foil, which is environmentally friendly. The one thing I won't do is put ketchup on my empanadas. That's just a huge no for me. Hot sauce is def the way to go.
I still eat mine with ketchup too,lol
Me and my family always used pique, but my husband uses Ketchup lol
you need to convert a pasteles recipe. I MISSS pasteles sooo much.😢
Did you heat both sides of the plantains?

Are there alternatives for the plantain leafs?
Wax paper made for cooking is frequently used for pasteles and empanadas. Obviously, it will lack the natural oils released by the plantain leaves; but we make do with what we have. Make sure you tie well with the string.
I just want to ask about the adobo. Is it a vegetarian version? Because adobo is meat
Margrethe Castillo the adobo I use is simply a seasoning blend by the brand Goya. No meat. 👍🏽

I am making the annatto oil right now.. not sure how long I should let it cook video just says a little bit help please
annaimosity 38 just a few minutes like 1-3 .. if you leave it too long it’ll make the oil really bitter! Hope this helps 👍🏽

Don't let it cook. Just let the oil have one or two bubbles then turn it off.
Do yu have to precook the “meat” before yu put it in the pot with the potatoes?

I see the confusion about it not being an empanada or looking like a pastel BUT what if this is actually an oven alcapurria? That's what it looks like to me. Also not every puertorican calls the things by the same name.

Hey there is a majority of people that are vegan because of food allergies that adobo and Saxon can't use it and it's horrible horrible for you, and they are short cuts not really cooking ....is there any way you can make videos without adding these....
