  • This year we decided to invest in an evaporator pan, the Sapling Evaporator Pan from The Vermont Evaporator Company. We're not affiliated with this company in any way, but we wanted to share our experience using it so far!

Love the pan! I had a similar set-up. Pile of bricks was a pain, so I welded up a burn box out of 1/4" plate. $350 in raw steel. Keep tappin!

That's a neat contraption, Eric!! I can imagine the mess you'd endure when you let the sap get too low. Being able to use all the "scrap" wood is another perk!! Bet you get some good char and ash as another byproduct!!

Absolutely! We mostly get ashes since we don't stop burning very often, but we definitely collect plenty of both for the garden between syrup making and using the wood stove!

I got one of these on order never used one, do you just fill all three chambers up to begin with and it naturally separates? Probably a dumb question but never used a pan like this

Yup! It doesn't really matter how you pour it in at the start. I sometimes even fill it above the dividers initially if I need to empty an extra bucket for gathering more sap up.

Thanks. I'll check out The Vermont Evaporator Company. What are the basic dimensions of your pan?

From what I remember, we were getting around 4-5 gallons per hour, but we never got an exact measurement. Next spring I'll keep a closer eye on it so I can update you then.

If you could just rig up a barrel on a stand above your pan with a flow tube and valve you'll be all set and have less chance of running dry or scorching
