Is there a process to rid of the gaminess of lamb ? I indulge my son though it is terribly expensive . I tried the Chinese way of using ginger , scallions , rice wine but I still cannot stand the very potent smell that sticks to your hands once you touch it.
Thought these were supposed to be oven baked am I the only one who missed this? Not knocking on them they do look great and juicy just figured they are oven baked

Sear on any pan to give it the crispy taste and char look,also traps in the juice. Then transfer to any bakeware. I highly recommend searing

Those lamb chops would be perfect after the sear. They're so thin, they would be medium rare, if they were room temp before you seared them.
