Since I don’t always have heavy cream it seemed much more convenient not to mention the beautiful gloss you achieve. Anyways, the texture of mine was horrid! The moment I knew it was going south was when it congealed in seconds and wouldn’t spread much. I trusted the process… alas, it was for my family. They don’t care if the chocolate didn’t go all the way to the edges. When trying to slice I discovered the true problem. It was tough yet bouncy so when cutting the middle I ended up plunging the skin (for lack of a better word) into the cake. I think it’s bizarre I was able to even mess it up this bad! 😆 Mine was no joke the texture of some sort of indestructible Kraft single! I was able to peel it right off the cake! I gave it about five minutes of cooling time before pouring. It still seemed very liquidy, but would be willing to admit this is where I went wrong. HELP
That's exactly what happened to me, except with the Caramel Mousse Cake. The caramel slid right off the top of the cake and pooled down the side. It was like taffy. Everyone ate it and loved the taste so still a win I guess?
The mousse looks very delicious! I have a request -- Can you make the Triple Chocolate Mousse Cake with Agar Agar instead of Gelatin? Agar is NOT animal protein. And, Agar Agar is a substituted in place of Gelatin. I really would like to learn from you. You are very artistic, professional, elegant, classy, and an awesome teacher in your baking! Merci!
