Coffee and Walnut cake
Ingredients
80g walnuts - chopped
215g ground almonds
100g desiccated coconut
1/4 tsp xanthan gum
60g butter
65g pure via caster sugar
2 tbsp olive oil
3 tbsp coffee essence
3 eggs
Method
STEP 1
In a medium mixing bowl add all of the ingredients and combine.
next line a cake tin or 2 small ones and then pour the mixture into the tin(s) and place in a
preheated oven. 180C/ 160C fan oven/ 350F / gas mark 4
