  • How to make Coffee and Walnut Loaf Cake. A simple, coffee-scented loaf cake, studded with walnuts and topped with a rich coffee buttercream.
    Ingredients:
    Cake
    6oz/175g butter, softened
    6oz/175g dark brown sugar
    3 eggs, beaten
    6oz/175g self-raising flour, sifted
    2oz/55g walnuts, chopped
    1 tbsp coffee essence (or 1 tbsp instant coffee dissolved in 1 tbsp warm water)
    Buttercream
    6oz/175g icing sugar/powdered sugar, sifted
    3oz/85g butter, softened
    1 tbsp milk
    1 tbsp coffee essence
    walnuts, to decorate

    You should always use a wooden spoon and not any form of electric mixer. That way you burn off the same amount of calories as you get from eating a slice.

    I made this cake yesterday and it's very good and not to sweet. However I used cream cheese instead of butter for the icing, less sweet and a little tangy taste. Next time I will add some dried raisins or fresh cranberries. Thank you.

    Can you tell me the temperature for a fan assisted oven please

      Typically you reduce the temp for a fan oven by 20C/50F, so I'd say 160C/300F. Although I would recommend double-checking with your oven manual to see if they have any guidance. Hope that helps!

    I thought the cake was going to be a fail at first since i melted the butter to liquid and it didn't look as thick as your mix, but boy was I wrong, In the end it turned out amazing, and my mum loved it! Thank you for the clear instructions and great recipe😁💙

    What size baking tin did you use ?

      The tin I used is -
      Inches - 8.5 x 4.5 x 2.5
      Centimetres - 21.6 x 11.4 x 6.35

      Yes, 1-2 days outside the fridge is usually fine for buttercream like this.

    no baking soda or powder?

      The recipe uses self-raising flour, which includes raising agent. But if you only have plain/all-purpose flour, you can add about 1.5tsp baking powder to the amount listed and that will work. Thanks!

    Could caster sugar be used optionally rather than brown sugar? I’m just new to baking so I’m trying out different ways.

      Yes, you could use caster sugar. I like the extra flavour you get from brown sugar, but if that's what you've got, then use caster sugar. Thanks!

    I made this per recipe but I didn't add baking soda. You should make note of this. Wasted ingredients 😢

      You shouldn’t need baking soda as the flour was self raising and so contains rising agent. If you used all purpose flour, (we call it plain flour here in Uk), you would need to add a about 1- 1.5 teaspoon of a rising agent such as baking powder.

      175g flour is about 1.5 cups of plain/all-purpose flour. I prefer using weights as it's more accurate. Thanks.

      It is a buttercream though...used for ICING or filling. Could also be called a butter icing if thats what you meant
