But here it is along with the instructions: Ingredients: Unsalted butter 150g Granulated sugar 137g Salt 4g All purpose flour 125g Baking powder 5g Egg yolks 35g Whole large eggs 190g Lemon zest 1 pc 1. Melt butter until very hot but DO NOT BURN IT. 2. Mix together sugar, salt, and lemon zest. 3. Sift flour with baking powder. 4. Add 1/3 eggs to sugar mixture, mix well. 5. Add 1/3 flour and alternate with eggs and mix well. 6. Temper in hot butter and mix well. 7. Place plastic wrap directly on top of batter, leaving a small opening. 8. Refrigerate over night. 9. Generously butter and flour pan, fill 3/4 full. 10. Bake at 425F until it crowns, then shut off oven temperature and bake until it has a light golden color. 11. As soon as they are removed from the oven, flip madeleines onto their side to avoid darkening.

Should we wait for the butter to cool off
Once you have mixed your egg with sugar and flour, add the warm butter in 3 increments, no need to wait for butter to cool.
