How to Make Lemon Brownies

  • Mostly sweet but a little tart, these Lemon Brownies are bursting with real lemon flavor!

    They're certainly different from traditional brownies that you might be used to, but they're every bit as chewy, rich, and moist as the classic chocolate version! I love topping mine off with a simple lemon glaze!

    Ingredients
    1 cup unsalted butter melted and cooled to room temperature 226g
    1 1/2 cups granulated sugar 300g
    2 Tablespoons lemon zest avoid the pith
    1 large egg room temperature
    1 large egg yolk room temperature
    1 Tablespoon lemon juice
    1/2 teaspoon lemon extract
    1/4 teaspoon vanilla extract
    2 1/2 cups all-purpose flour 310g
    1 teaspoon cornstarch
    1/4 teaspoon baking soda
    3/4 teaspoon salt
    LEMON GLAZE
    3/4 cup powdered sugar 95g
    1-2 Tablespoons lemon juice
    1 teaspoon lemon zest
    Instructions
    00:00 Introduction
    00:33 Preheat oven to 350F (175C) and grease and flour a 9x9 baking pan or line with parchment paper. Set aside.
    00:38 In a large bowl, combine melted butter, sugar, and lemon zest. Stir well.
    01:22 Add egg and egg yolk, lemon juice, lemon extract, and vanilla extract. Stir again until well-combined.
    01:48 In a separate, medium-sized bowl, whisk together flour, cornstarch, baking soda, and salt.
    02:02 Stir dry ingredients into wet until completely combined. Pour into prepared 9x9 pan and transfer to 350F (175C) oven. Bake 30 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Allow to cool completely before covering with glaze.
    LEMON GLAZE
    02:53 Once lemon brownies have cooled, prepare glaze by whisking together powdered sugar, 1 tablespoon lemon juice, and lemon zest until well-combined. If mixture is too stiff, add remaining lemon juice, 1 teaspoon at a time, until desired consistency is reached (when you lift a spoon or whisk out of the mixture, the glaze that drizzles off the spoon and falls back into the bowl should hold its ribbon shape for a few seconds before fading back into the rest of the glaze).
    03:51 Pour glaze over lemon brownies, use a spatula to smooth evenly over the surface.
    03:57 Allow glaze to harden (about 15-30 minutes) before slicing and serving lemon brownies.

    just made these and they're a bit too sweet for me, but i think it's bc the lemons in my backyard are a little sweeter than regular lemons!! i keep forgetting that lol but either way these lemon brownies are still really good. i couldn't wait for it to cool so i cut into it and ate a few squares haha thank you for the recipe!!!

      😂😂 I am guilty of doing the same thing! I’m glad you enjoyed them. I have heard home grown lemons can be much much sweeter than the store bought ones.

      @@SugarSpunRun woah! i never thought that could be a thing, where home grown lemons can be much sweeter than store bought lemons..how interesting!! next time i use these lemons for anything, I'll try to remember that they're already sweet lol

    This recipe looks amazing! I do have question. How do you remove the iced brownies from the parchment paper without breaking the brownies? We're going to serve this with lemon sorbet for our friends and I don't want to make a mistake. Can you help me???

      You can actually watch me take them out of the pan at the 3:48 mark. I pull them out and then add the icing. :)

    Thank you for sharing this splendid recipe! I find it very helpful that you showed the steps and included & explained the consistency of the batter and the glaze.
    Forgive me for mentioning this, but I found it a bit off-putting when you lifted the pan and it appeared to be close to your hair. I realize it's probably the perspective of the shot, but the pan's proximity to your hair (which is absolutely beautiful btw) completely pulled me out of the demonstration and distracted me. Nevertheless, I thank you for sharing this recipe!

    Why do you use UNSALTED butter but then add salt in the recipe? Makes no sense to me. Just use regular salted butter
