Claire Saffitz Makes Us Next Level Blondies

- Clairen Saffitz, chef, UA-cam personality, and cookbook author, wants you to cheat on your brownies with blondies, a salty-sweet and chewy baked confection that may have its chocolate counterpart beat.
Claire’s blondies are studded with double-roasted cashews that are covered in toffee and feature all the qualities of a great dessert: buttery richness, brown sugar sweetness, and even some flaky salt for a crunch.
It’s one of Claire’s recipe from her newest cookbook “What’s For Dessert,” so you know it’s gonna be good.

The coloring of this video makes me sad🫤
I'm really glad that Claire had left the pretentious crowd at Bon Appétit and is doing her own thing now! Went to my favorite donuts place in Brooklyn (Fan-Fan Doughnuts) after a looong time and they had a copy of her book Dessert Person laying around... apparently, these guys are taking sweet stuff seriously as well!

@@Dregen-zr9th Would not be surprised... but there seemed to be weird stuff going on in mind-2020, with some staying on and some leaving Condé Nast. Some of the ones staying suddenly posted the most absurd "mea culpas" (like Brad on IG) about basically nothing but with lots of zeitgeist-y virtue-signalling... and since then, the old vibe of curiosity, experimentation, madness and general "joie de vivre" has been replaced with a bunch of self-important "actors" who are displaying hardly any true enthusiasm for what they are doing... Claire on the other hand has her own YT channel and appears even more authentic and relevant than ever before.
She had the best show on Bon Appetit

I made this and my family absolutely loved them, i look for short recipes with easy to find ingredients but are next level in terms of flavours and this was perfect! I will definitely look for more of your videos and possibly your book.

It's a style thing - remnant of like 4-5 years ago when it was very trendy to have a minimal color grade after shooting in LOG. I'm glad it's kind of gone out of fashion now.
Look at old videos from bigger 'production' channels like Buzzfeed or VICE - they're all very muted and gray.

I made it and my assessment was that 1cp of nuts is more than enough. I had a very nut filled bar and still had 1/2cp of cashews left. Also my batter looked thinner than hers, but I cup measured and should have measured the flour by weight. For me I added 1/2vp of flour and batter was still pourable. I think white chocolate might be ok with the nuts, if you sub white choc for the nuts though will be far too sweet

Notice no added leavening agent like b soda or b powder. Is the egg alone be used to rise the batter?
Yes. In her recipe video for brownies she says that u gotta give the batter a good mix at the end (45 seconds) till the batter forms a ribbon when u lift the whisk to develop some gluten.

Dessert person was great but there are a lot of videos she made of how to make recipes from dessert person so you might be able to get more recipes in total if you get this one and get dessert person recipes off youtube
Get both from the library and then decide.
What's for Dessert is supposed to be a little more straightforward. Every recipe can be done by hand or with a hand mixer. Dessert Person does require a stand mixer for some recipes. Maybe start with What's for Dessert? And if you run in to some extra cash down the road I would definitely get Dessert Person!!!

They had around 50 unpackaged Twinkies as decoration on a plate, which was unnecessary by itself, but then Claire (all giggly and being like "ewwww not real food haha lol" ) threw the entire batch in the trash can.
