Hello :). In Germany, we call it "Pudding" (just without cinnamon). We usually just make it with starch, it's faster. our grandparents and pastrychefs also make it with egg and starch. After it´s cooled down, add amound of butter and you have a typical German buttercream Cake filling.

А я делаю так: 0'5 молока , сахар по вкусу, ванилин,корица и лимон (цедра) по желанию, 50 гр масла , варить до кипения,затем добавить 2ст л крахмала разбавленного молоком ,ещё немного поварить до загустения,если кто то любит шоколадный привкус,добавить в самом начале приготовления 2ст л какао-порошка , дать остыть, разлить или в высокие бокалы, или в креманки ,остывшим совсем поставить в холодильник, после окончательного застывания я достать из холодильника, взять красивую ложку, пойти в гостиную и около камина(если он есть), откушать этот десерт))))
this is called , Manjar in spanish is the best sample and very lovely. my mom used to male this desert ,we where poor growing up but we never knew it we were happy and enjoy life, now we can affords much much staff but is never the same. thank you for the video it really bring back very happy memories. Yes egg custard. My grandma used to make it all the time. It did not have lemon or cinnamon but had a vanilla flavored crème and nutmeg was sprinkled on top. Delicious!

I just use my hands. 🤡
Seriously, I'm always washing my hands when I cook anything, so after dumping the eggs into bowl 1, I just reach for a yolk, let the white drop into the bowl, and gently plop the yolk into bowl 2.
I tried the "plop the yolk back'n'forth between half-shells" method, but lots of times the sharp edges of the shell just cut into the yolk if you're not careful.

You just use the egg shell to separate. Pour from one to the other. If doing a lot, just pour egg into palm and let White seep through your fingers. 30 years of restaurant cooking. Never seen an egg separator. I think you’d get laughed off the cooks line.
I mostly use the egg shells going back and forth getting the whites off if by chance you drop the yolk in and don't want to use your hand you can take an empty water bottle squeeze it some put on yolk and suck it up then carry it over to other yolks and squeeze and it will drop in.
Very similar to U.S. soul food banana pudding. We make the custard very similar and pour over layers of vanilla wafer cookies and sliced bananas. Delicious!

In the US, like Marilyn below from Canada, we also call it "egg custard," but would use nutmeg, rather than cinnamon for the spice. I suppose one could even extend it and give it an Indian take with a bit of either cardamom or garam masala.

En guadalajara hay algo parecido sin la maicena , ni las galletas de encima, se hornean a baño maria, se llaman jericallas y es un postre típico muy rico

I am from South Africa. We have a similar traditional dish called "Melktert" or Milk Tart. We even have a national day for it.
Made the same way, except we don't add the lemon rind. we even have one that is baked in the oven and has a sort of cream cheese consistency. I am keen to taste this version though

Абсолютно верно - крем заварной.Вместо крахмала , я - муку добавляю..Потом, в конце, перед покрытием коржей , немного масла и коньяка или водки..Ну а это - на любителя....

My mom used to make this for us all the time. She learned from her mom that came to Cuba from somewhere in Spain. I cant remember what she called the cookie but it looked just like what you did. Brings back great memories! I am going to have to give it a try myself or beg one of my sisters... LOL! Gracias! Veamos como resulta.

In South Africa we call it milk tart. People love it -it has become a national dish. We even have a national Milk tart day! Only difference : We beat the egg whites and fold it into the thickened warm milk mixture to make it super fluffy.
We make a very similar tart / dessert here in South Africa called Milk-tart. Basically the same process except for the lemon rinds.

In my country (Brazil) we make with coconut milk instead of milk and sometimes gelatine instead of corn starch. And we serve this white pudding with cooked prunes in its sauce. It's a real treat. Will definitely try yours! Thanks for sharing!

This is almost exactly like my grandmother's custard recipe to fill cannoli's only she also used orange rind and a whole vanilla pod. After the custard cooled on the counter she would mix in broken pieces of Hershey's chocolate bar, fill the cannoli and dip the ends in crushed roasted almonds then sprinkle them with powdered sugar. Best cannoli's in the world.
Oh wow. They sound outstanding. I lived in ltaly for almost 20 years and loved every moment but, have been back in my homeland of New Zealand for the last 30 and cannoli are pretty much impossible to find here. A couple of years back l was visiting a favourite cafe that had recently been taken over by a young ltalian couple, they had been experimenting with putting ltalian pastries on the menu, had recently begun to make cannoli and he asked me to try one for them. To my absolute mortification it brought such a flood of nostalgia and longing for a country l loved and still miss that, rather than being able to say how good they were, l started to cry. We could both see the funny side of it and they agreed it was probably the nicest thing l could have "said" anyway. I am CERTAIN that if l were ever lucky enough to stumble across anything as good as your Grandmother's cannoli sound l would cry!

I used to do the same except would put the mini dark chocolate chips and on the ends we would dip in melted chocolate then some would have nuts some wouldn't then like you sprinkle powered sugar on top and we used the orange peel. I was going nuts trying to figure out the recipe as to what it matched up with until I read yours comment thanks for reminding me I have been wanting to make it but lost my recipe can you share yours? what do you do for the shell I used to cheat and buy them but I don't live back east anymore in NY. Never had a recipe for shell do you?

My “Nana” used to make us kids egg custards in regular mugs when we were sick.....she boiled the custard mixture mug in a pan of water until it thickened. Best “medicine” we ever had for GI flu recuperation!

Si en Paraguay tenemos uno que se hace con harina de mais, y azúcar, cocinamos hasta que espece, y lo ponemos en un pirex y lo espolvoreamos con canela. Cuando enfría, se puede cortar en trozos y comerlo con los dedos, es riquísimo

In Jalisco Mexico we have "jericallas" same procedure except for the lemon and cookie. We put the custard bowls in the oven on a pan of water. They call it "baño maria" until the surface is dark brown...sometimes almost black

You mean “Bain Marie”. ( it’s a fancy term for a hot water bath for your custard or puddings).

En Uruguay le llamamos crema de maicena y lleva por encima caramelo líquido. Suele lllevar más maicena y menos yemas de huevo. Se ve muy rica, gracias!

In Venezuela there is a recipe very similar to this one only you ought to add a few drops of lemon juice in it. I honestly don't understand how it'd work but that is the recipe. The texture is similar to this one only a little bit lighter.
