      Hey there! I made the recipe. I added some Stevia for sweetening and about 1/2 cup of blueberries after I mixed. My bread looks nice but as soon as I pull it out of the oven, it starts to flatten to about half the height it was when in the over. Is this normal? If not, how do I remedy this? Thank you - Jeremy

    I enjoy very much this recipe! I use 4 eggs to reduce eggy taste. For me olive oil is a strong flavor, so i combine half butter and half olive oil. The bread was moist and with psyllium hush it has a similar texture of a regular bread.

    I love this recipe! It really is the best keto bread. I love that I don’t have to separate the eggs and whip the egg whites to stiff peaks. I give it a split open look by cutting the dough in the middle. Then I sprinkle it with Trader Joe’s everything bagel seasoning, which is a combination of sesame seeds, dried minced garlic and onion, salt, and poppy seeds. It comes out beautiful and the seasoning hides the eggy taste. Thank you so much for all your recipes!!!

    This is the best keto bread. I did make two tweaks.
    1. I used 4 whole eggs and 4 egg whites to cut down on the egg flavor. It only tastes slightly of egg straight out of the oven but that completely went away after it cooled.
    2. I used more psyllium in place of the xanthum gum; same amount.
    Thank you for the recipe; we’ll be making it again and again.

  • @laffincrow
    @laffincrow 6 років тому +15

    I just made this and the flavor & texture are WONDERFUL! Next time I will use a smaller loaf pan as this spread a bit too much making a flatter loaf. I did use xanthum gum as I think it helps w texture & slicing w/o crumbling. I had whole psyllium husk on hand. I think ground would make a lighter bread. Another excellent recipe! Thank you!

      I like that there is no dairy in this bread I have autoimmune disease so I try to only consume goat dairy for health reasons and for me its best if its raw (for my gut health, so as not to destroy the enzymes etc.) and my spouse also has autoimmune disease and is allergic to dairy LOL.... I wonder if the spices alone will help calm the egg flavor?

    My dear wonderful sir! Thank you so so much for this awesome recipe. I made it yesterday, and it gave a wonderful aroma from the oven. I omitted the xanthan gum. All else was exactly as you did it. It is light and delicious. I cut the loaf into six equal pieces. You did a great job at making the fats high (150 grams per recipe) , the carbs low (12 grams per recipe) and the protein in the moderate range (52.8 grams per recipe). You are one of my favorites. Thank you for taking the time to do the recipes for us. Have a great day!!!

      Chia seeds make a great substitute for replacing eggs in a recipe. 1 tbsp chia seeds and 3 tbsp water makes 1 medium to large egg. Experiment and sub half with egg and half of egg substitute. From there you know to eliminate or add a real egg.

    I made this bread just now and it's turned out to be amazing... Extremely soft and lovely... I topped it with white sesame seeds as well... Where can I share my pic of the bread?

    Probably dropping 4 of the yolks would lessen the eggy taste, adding a few herbs would seem to cover it nicely.
    This goes straight into my faves for sure. 👍👍

    when I bake these types of bread I add some yeast for flavor. makes it taste more like 'real' bread. great channel by the way! I cook one of your recipes at least once a week. palak paneer is my favorite!

    So sad that nothing will be like regular bread. The keto breads seem so dense and hard to swallow even slathered in butter or cheese or whatever. I will hv to try it to see if its lighter texture than almond flour. Thank you for making this video. 👍🏽🤗

    I finally made this today, with the weight-based measurements in the written recipe, and I really like the taste and texture. Here's the result:
    imgur.com/a/QrO3p
    Definitely like it way more than almond bread or peanut butter bread. I hope you don't mind a few questions, though:
    1) Despite my using psyllium husk powder and baking powder, the loaf ended up being very dense and not fluffy. What could have caused this? I think I might have overmixed after I added the dry ingredients to the eggs + oil + husk powder mixture (I used a hand mixer until the batter looked smooth), could that have been it?
    2) The taste, while good, was a bit dry to me and a bit bland. I plan on adding sweeteners and vanilla extract next time, but is there something I can do to make it less dry?
    3) Do you think adding more baking powder and separating the whites from the yolks, then beating the whites 'til stiff and folding it into the batter would make it more fluffy or rise more, or would this be useless with this recipe?
    4) How long does this keep and how do I properly store it?
    Sorry for all the questions. Thanks again for posting this recipe, I finally have bread in my life again!

    • @HeadbangersKitchen
      @HeadbangersKitchen  6 років тому +1

      hey Lyn. A looks great!!
      1. How long did you cook it for? Perhaps the cooking time might have resulted in it being more dense.
      2. Taste I guess can be improved with just salt or adding herbs etc for a more tasty bread, vanilla and stevia for a 'sweeter' bread. For dryness I think it's the cooking time.
      3. I don't think more baking powder does anything but the separate of the eggs might help definitely. It's worth trying.
      4. I keep mine in the fridge and it lasted a week. Freezer it can last months I think

      I see, I did leave it in the oven for an extra 10-12 minutes on top of the 40 'cause I was afraid of it being underbaked, but will take it out at 40 minutes flat next time. Will also try the egg whites folding thing. Thanks so much for the reply and the storing info! My family's been cutting off slices throughout the day so I don't think I'll have to wait a week before I get to try the recipe again, LOL. Guilt-free bread is amazing.

      Psyllium husk vs psyllium husk powder
      Powder version will make it very dense

    what would happen if you used only 4 eggs? would it still rise? i have bought powdered collagen, and found when I add this to baked goods, it adds no flavor, but it rises like crazy :)

    • @HeadbangersKitchen
      @HeadbangersKitchen  6 років тому +1

      Yes it will still rise but you might need to add some cream or something or you might get a much more firmer dough. You can give it a go and tell me if it worked. I think you'll get a more dense loaf.

    Enough jibber jabber - I love this one. Think it is my favourite keto bread using coconut flour. I used 4 eggs with two extra egg whites. The oil made a big difference too. And I seemed to handle the psyllium better this time using the electric whisk. Thanks
