Delicious! Love the raspberry addition, too. Glad you were inspired to try it, love your assistant's style and remember to check and stir at least every couple weeks. That fruit will shrink, then there'll be more room for a bit extra rum :)

LOL That was so cute...looks like crack...how would you know? Tell your daughter that she did a great job! My best friend just brought me a mason jar full of strawberries and maple syrup, you freeze it and when ready just thaw and the fruits just release there juices! Can't wait to try that one :)

It also smells wonderful! She posted 6 short videos of the whole process, we are just making 2..the process and in DEC, the tasting.

I was happy to see your video. I made brandied peaches the same way. I used an 80proof brandy. I called Ball today who said they couldn't consider the fruit safe because I didn't cook in in the bath for 20 minutes. All the work I did. I thought that I would have to toss it because I didn't refrigerate it. Do you refrigerate yours. Does anyone not refrigerate? Is it okay
Thanks for your question, and a prime example of CYA and over zealous food safety regs. Your product is safe. People have been preserving fruits in alcohol in this manner for millenia and we have not died off. Current corporations and government entities will always recommend "over-the-top" rules to prevent lawsuits and herd consumers of their information into full-bore, no-error, food safety. I did not and do not refrigerate my rumptopf made in 80 proof alcohol of any variety. The alcohol (rum etc) is a preservative in itself. just cover the rumtopf and allow to steep until you are ready. In the vid, my daughter tightened the lids way too tight. I loosened them later, as you have to let the gas escape.
