Rumtopf a Deliciously Simple Boozy Fruit Preserving Compote

  • If you have never heard of a Rumtopf it's an incredibly easy way of preserving summer fruits to eat all through the winter months. All you need is fruit, sugar and spirits (rum, whisky or brandy; whatever tastes best to you).
    We grow our own food on our smallholding and endeavour to be self-sufficient, but this recipe can be duplicated with fruit you buy either fresh or frozen.

    I forgot all about this was a hit in Canada in the 70's or so. Add some ice and tonic or soda and make yourself a lovely refreshing not so alcoholic cocktail... or just a shortcake and whipped cream.. Thanks so much

    This took me back! We bought a rumtoft back in the seventies and we made it a couple of times. I remember my Dads sister ‘Aunt Peggy’ coming round to see us at Christmas and she was offered a glass of Rumtoft. It went down very well and two more glasses followed. Needless to say ‘difficulty in walking and words were slurred. 🍹

    One of my absolute favourites which I make every year. My brother was in the Army based in Germany for many years and it was he who bought me my first Rumtopf. It is very good at Christmas served in small bowls with home made cinnamon ice cream or in the bottom of a trifle. I also when most of the fruit has gone decant into a clean bottle and drink it as a liqueur. If you end up with a little fruit left over and are not in a position to use it up straight away can always freeeze and then use in a trifle or in a gateau style cake akin to a Black Forest with plenty of whipped cream. Cannot waste at any cost. Do not use cling film on the Rumtopf muslin is ideal. an go mouldy with cling film preserve needs to breathe. Also use the Rumtopf for making home made mincemeat the recipe I have is a traditional fermented one but absolutely delicious. There is an English variation of this cannot for the life of me remember the name at the moment. The French version is known as Batchelors Brandy and that tends to concentrate on apples plums and pears. Another brilliant video.     Mercy this looks-amazing … I’m presently doing this with my first ever harvest of plums..I can recall all of these fruits you are using growing up in Bavaria as a child … but here in the Deep South of the US those fruits don’t
    Make it… strawberries and a just found raspberry for these hot temperatures work fine I just found a few years back …sadly cherries my LOVE are not a possibility have a twö gallon glass jar that is presently my Rumtopf … looking forward to a Christmas cheer for friends and family …cheers friends across the pond…

    We make this and other compotes using our neighbours home distilled rakia, absolutely gorgeous and when added to porridge it makes a great start to the day during the Bulgarian winter! Happy to watch different preserving techniques as we continue to expand our knowledge out here. Enjoyable and well presented video as always.

    Thank you for this! My parents had one of these up high in their bedroom (probably to keep all of us kids from raiding it -it didn't haha) Anyway, I started this last year in my new Ridway CO home (in a glass jar with a flip top) and have been enjoying it with friends on top of ice cream every few months. I have been storing it on my kitchen counter and have put a rubber seal on top of the fruit/rum to keep the fruit submerged (I had read in someone's blog that their fruit became moldy because it wasn't covered by the rum) Now, I've found a beautiful ceramic pot with a lid, transferred my fruit, and added a layer of peaches/fruit/rum to the top. I've just been browsing the internet for more tips and I found your nice video here. I've also found another video ( the host is German) and she is now making her rumtopf in her Texas home. She said she has to keep her pot in her refrigerator! I guess I would know if my method didn't work because the fruit would have tasted bad but what are your thoughts on how warm is too warm in your home to keep it on a counter?

      Hi Rita,
      Thanks for your lovely comments. As long as the fruit is submerged, it should be fine. I make a preserve of pears poached in brandy syrup and the heat adds to the preserving. If keeping fruit submerged is an issue, try one of the glass weights for fermenting sauerkraut. That said, it certainly will do no harm to keep it refrigerated. Hugh

    Did my first this year. I’m in to reminiscing and nostalgia this year. The rumtoft liquid came out quite light coloured. Got the 65% alcohol (this is recommended strength) - One tip from a German was to after cling film directly on the top of the fruit place a zip lock bag half water and half air (sealed of course) as it floats but keeps the fruit below the water line. Your fruit looks amazing. Thanks for the video. I’ll do more dark fruit next year and more fruit to alcohol ratio.

      Hi Polly. I've just smacked my forehead. If you watch our fermented chilli sauce video, you will see me use the Ziploc bag technique. It never occurred to me to use it in a Rumtopf. Thank you! Hugh

    Another good video guys, the one you suggested on sand clamping would be very useful. Some of our candy beetroot went mental and we have had three that weigh in at over a kilo! ATB Rob.

    Seeing you pick the berries off one at a time makes me think it must have taken ages. I always run the stalk through the inside of a fork and the ripe berries pop right off. It's a lot faster when you have several bushes to keep up with.
    You reminded me that I must get another white-currant bush though. I haven't had them since I gave up my allotment.

      I do the fork thing for elderberries etc. and you are right, it works well, but Iquite enjoy doing currants. We have only 200 square feet of currants - about 15 bushes - do it's not a great chore. I do think that white currants are amazing, yet most have never tried them!

    Excellent! Thank you for showing us that it is perfect to use a different vessel than a traditional rumtopf jar. Imagine it is simply delicious as a dressing for a heavy fruit cake set aflame as well! Can I add high acid fruit like pineapple to the mixture, will the acid mess up the process?

      I've never tried with pineapple, but I think it would be incredible with a light rum, maybe add papaya, mango etc?

    You could cut that cheesecloth in a circle and turn over a casing to thread elastic through. Essentially make a cheesecloth shower cap that’s just the right size for the pot. Would make zero difference to the functionality of it, but it would look neater and keep the pot looking beautiful.

      English Country Life ha ha! Don’t injure yourself!! Someday is good enough. I have a sewing room and my kombucha crocks which I started back in March are still covered with a paper towel and a rubber band, so I’m not really one to talk lol. I’m waiting to find the perfect fabric to compliment my kitchen you see. That’s the excuse and I’m sticking to it! 😂😂 Maybe I’ll make it to the fabric store one of these days. That would probably speed the process up a bit!

      I'm just not that good with the sewing machine, and having suffered the absolute heartbreak (and expense!) of carefully tending my Rumtopf all Summer, only to get to tasting day and discover it full of dead fruitflies and their revolting offspring, a quick solution was needed. I do much the same, only smaller, on glass airlocks for my demijohns. The flies can't get into the wine, but happily drown themselves in the u-bend, and turn to a disgusting sludge that's a pig to clean without breaking the glass. 😉

    We have a rumtopf in progress in a kilner water dispenser jar. When I decided to make my cherry brandy, raspberry whiskey and various sloe concoctions the other half decided he wanted a rumtopf. He lived in Germany for 12 of his first 18 years and his parents always had one on the go. Unfortunately his mum and dads rumtopf jar got thrown out when is mum passed away a few years back :(

      Hi - we rinse fruit in clean fresh water but definitely no chemicals

    I started my first rumtopf today in a huge crock from my great grandma. I took 4 huge bottles of rum and poured them all in there even though I only added cherries and strawberries so far. Is it ok that I just add fruit and sugar as it come ripe as long as the rum covers the top?

      That's absolutely fine josh - too little rum is a problem but extra causes no issue. Just keep adding fruit & sugar

    How did your batch in the clip top jar turn out? I'm curious because of another commenter's statement about not using cling wrap for risk of mold and I thought a clip top jar might pose the same risks.

    Yum! 2 questions: 1) with the traditional pot, there's obviously a means for any fermentation gases (? if they exist using this method) to escape - however with my large Kilner clip top - should I expect to burp it every now and again? and 2) Do you need some form a weight to keep the fruit under the booze? I'm also strictly calculating the investment to be made not only in the fruit but the booze! lol that's going to be a rather expensive bit of dessert ... hints to hubby to set up a still ...

      I don't use any weights and everything seems fine. I also wouldn't worry overly about gas since there is no fermentation happening, but an occasional vent would be wise. I wish we could have stills here!
