They trade off the amount of meat European beef breeds have, but don't have to be mollycoddled like them.

Intensive selection for maximized beef production at the cost of ease of maintenance has completely transformed all the popular European beef breeds far from their ancestors. A Scottish farmer from the 18th century would be shocked at the amount of time and effort people put into their cattle.

In fact, in an early scene in the Disney adaptation of the story of Rob Roy, a brief scene shows a peasant woman milking a Scotch Highland broodcow, which proves that the Highland type served a dual purpose.
