I've been baking all sorts of bread puddings since the late 80s, when I was manager of a diner. So, I know great bread puddings, and this is DEFINITELY a great recipe! The only thing I would offer, is to use a mix of golden and dark raisins, SOAKED IN RUM. The alcohol bakes off, just leaving a hint of rum flavor. I am so anxious to try your sauce; it is different from other sauces I'm used to. And it looks fabulous! Thank you for this video. I hope you & yours have had a wonderful Christmas. Bread and butter pudding is a traditional British dessert, also. It’s made in the same way, but different! We used sliced bread - or any bread sliced up - in layers, with sultanas included in each later and on the top, with cinnamon sprinkled on the top. We put the layers of bread in first, without soaking in milk, and then add the cream and eggs, etc., afterwards in between layers and let it stand for a while before putting it in the oven so that the liquid can soak in to the bread. So, the same thing but done in a different way. The layers of bread are built up like roof tiles so that the edges of the crusts stick out of the liquid. Sometimes we cut the hard crusts off but the remaining edges poke out of the cream to get crispy. The sauce isn’t separate. We put that on top of the bread to bake in the oven instead of soaking it in milk first. There’s another dish that’s a bit the same - summer pudding. This one you don’t cook the pudding itself. Made in a pudding bowl with slices of bread around the bowl and on top and in layers, but the bread is soaked in summer berries and juices. You can make it in a cake tin if you’re going to serve it out - just put two layers of cling film in first so you can pull it out of the container. You can used any summer fruits - blueberries, blackcurrants and redcurrants are cooked a little first to release the juices but blackberries and raspberries are squidgy enough already. You seal the whole thing with sliced bread on top, then cover with cling film (Serrano wrap) and place a heavy tin in top so that the dry bread absorbs all the juices. Then you put it in the fridge overnight. You serve it with fresh berries and cream. You can boost the flavour with cassis or fruity wine. It will keep for 2 days in the fridge or you can freeze it.
