  • What's good BBQ Family!! I decided to see what all the hype was surrounding cooking a Tri Tip like a brisket and taking it until it's probe tender (around 203 degrees). So we fired up the Lone Star Grillz offset smoker with some Oak wood, then seasoned with Meat Church's Holy Cow Rub and smoked this tri tip at 250 degrees for a few hours before wrapping it in butcher paper until i was probe tender at 204 degrees. The bark and smoke ring were phenomenal, and believe it or not it was still very moist despite being cooked to 204 degrees, and that rub was the perfect compliment for that prime beef! I'd definitely recommend you give it a try!     Been making smoked then crispy grilled tri-tip med rare for years. Its a family favorite. I just did a tri-sket tonight for the first time.. im not sure if i can ever go back. It was phenomenal! Left a thin cap on top that rendered nicely and wrapped in foil with butter half way. It passed all of the brisket tests. The best part, the wife and kids dont like brisket. Its ALL mine!! I rubbed it with some Lowry's OG for the base, Kinders butter herb, then right before the grill added cracked pepper and dusted with instant espresso. The espresso adds a nice level of richness to the meat without tasting like coffee.
    BTW boss where you at? Cinder block fence, a pool, and palms looks like our style here in AZ!

    Looking forward to this cook. My only experience with Tri Tip is finishing off to medium rare.
    Another great cook! A few weeks back I did a boneless leg of lamb, I usually cook lamb to medium rare. I took this one to about 160 then wrapped till 195ish. Best lamb I have ever eaten. Demonstrates there is more than one way to cook meat.

    Many people question tri tip "like a brisket". Me being a single dude, it makes perfect sense! I don't won't to waste all that brisket meat. I've done a tri tip like this, dead honestly prefer this method over traditional. It's a classic, don't knock it till you try it!

    great minds think alike...I'm planning to do one tomorrow! I've done on the pellet smoker before and it was great, better than I thought it would be. Doing this one on the LSG too this time. Love the mustard/pickle juice schmear!

    Before you go out buying a new knife get yourself a good knife sharpener and a honing steel. Whatever knifes 🔪 you have will need those things anyway so do that first and you may save yourself some money and boost your self worth 😉

    Tri-Tip as a brisket is great if you have a small family and don't want 10lb of leftovers. I'd encourage you to try it with just plain old Montreal seasoning.

      You're so right! You know I just recently used Montreal seasoning on a brisket about 8 months ago and it came out 🔥🔥.. I bet it would be great on a tri tip as well.. hell it is steak. I'm definitely gonna have to try that...🤔🤔👊🏿💯💯

    Nice job. Gotta try that. As for knives I took the best knives I have an took to a local sharpening shop and make sure I hone it before use.

    Pickle juice and mustard... I'm going to try that with a bit of brown sugar added to the mix... You have to add the sweetness!

    My friend you need a CUTCO knife. You will keep it forever and they will sharpen it for you for free when needed...if needed. Do it. I love my CUTCO knives...Thanks for the BBQ lesson on tri-tips. Im doing mine tomorrow on my GMG Ledge grill.

      @@KillerMillerQue It was really good. I actually like it better than steak. Tender, flavorful. I wanted med-rare and took it off at 135. Next time Ill keep it until 145-150. Im not as bold as you at 165! Hope your turned out good too! Thanks for all your tips! Ill keep looking for more of your instructions!

    Another good video Joe...thx for sharing! The meat does look good, I will need to try a tri tip like that even though my wife is rolling her eyes.
    I got a Victorinox slicer a couple of years ago and it was a game changer. It was about $50 and works great at slicing anything even tomatoes (wife's idea). Once you try one you will kick yourself for not getting one sooner, my wife uses it often and it is easy for her to handle. She even asks why did we wait so long to get one. Thx again.

      @@KillerMillerQue , I actually did a tri tip and brisket last weekend. I used the Meat Church Voodoo seasoning like the recipe he has on his website. It was good but I won’t use the Voodoo again on brisket!! Live the Holy Cow and Holy Gospel as well!!

    Smoke Boss! Nicely Done Sir.💯 Looks amazing. My 2 cents as far as knives go, Victorinox all the way and I have some Dalstrongs but still like the Victorinox knives more. 10" butcher and a 6” flexible boning knife and you could carve a cow😂 nice work Bro🔥

    That brisket method is the way i always go....cant beat those results....
    You said you like challenges...try a bottom round roast....i did two last friday...im curious to see someone else's results...

      @@KillerMillerQue Love tritip!!! I really like this pellet rig, it’s definitely a step up from my recteq stuff! Runs very clean with one of the most consistent, even temp cook chambers I’ve seen & smoke flavor is on point. It’s not on the flavor level as my stick burn but on that note, no pellet rig ever will be lol! This is probably as close as it gets though 😁

    Kidding. Love some tri-tip, you cooked them well. Nice job.
    I use Victorinox knives. They're great and not over expensive. They're not overly fancy either. That's what a lot of professional cooks use so they're fine for someone that's terrible like me.

      @@KillerMillerQue I went with the whole set just so I could keep my BBQ stuff separate from the house stuff so my wife doesn't murder me. Honestly I only really use the small and large boning knives for trimming and the 12" straight bread knife for brisket. It does come with a case but that's nothing to write home about.
