I remember seeing somewhere that a tsp of dried mustard brings out the cheese flavor. I tried it and it worked.
That was when I was making Mac and Cheese. Amount should be proportional

I don't think I've ever seen a cheese sauce recipe from the UK that doesn't use cheddar and a bit of Colemans! And I consider Colemans mustard powder in cheese sauce a must do just like nutmeg in a cream bechamel sauce. Just a little of those spices will elevates a sauce to a higher level.
So why not add the dry mustard to the cheese powder in the beginning?

After watching your video I dehydrated 3 dozen eggs a while ago. I have scrambled some and they turned out great. My daughter likes the dehydrated ones better than the fresh ones. She is a picky eater so this is a great option. Thanks for all of your videos! I used my brake bleeder to seal the jars.

I failed at waterglassing eggs. They cracked. And I was being super careful. I love dehydrating eggs. You’re right, they take up less room.
For me 16 eggs make 1 pint of dehydrated powdered raw egg. It works out just perfect every time. Maybe I could squeeze 1 or 2 more in there but because of my warped trays I can only do 4 eggs/dehydrater tray. I also always add a moisture absorber to anything I powder before vacuum sealing it. So far so VERY good! I absolutely LOVE my colby jack cheese I dehydrated too. It is exceptional on popcorn! :)
Yes, I had a couple of warped trays, so frustrating! When I switched to the silicone with the edge around it (FINALLY found those to fit both styles of dehydrators I have!) they were perfect and no more issue with that.
I have personally found no need for the extra expense of desiccant or oxygen absorbers when vacuum sealing. If you get a good seal, then moisture and air cannot get into the jars.
I tried dehydrating my eggs for the first time last week thanks to you Heidi! My girls are rewarding me richly every day. This will be my main method of preserving my eggs. They cooked up just like fresh eggs and I love that they take up no freezer space.
Overall, you give me so many frugal and creative ideas of preparing food that one of your videos can keep me busy for a while. Thank you for all you do!

Your 1st dehydrated cheese video was my very 1st video I ever watched of yours. I did use paper towels along the way to soak up the fat, it was amazing and it does make the best cheese sauce, we even used it to fondue. I'm dehydrating eggs this weekend. Parmesan cheese turned out great too.

I was thinking of storing a bucket full of eggs and lime but I also like the idea of having eggs as part of a collection of dehydrated foods. And it's also great to be able to have some dairy even if it's only for 6 months to a year. In addition to chopped up dried veggies and veggie powders cheese powder and eggs will provide a lot of versatility in addition to the other stuff that one usually keeps in a pantry
I have kept quality powdered milk for 9 years that was still good. It is how it is stored that matters and shelf stable food does not suddenly go bad at the end of a set time manufacturers or even food storage sites place on them. Those dates only refer to quality yet the quality of the good, whole milk I have stored has stayed consistent even years later
Powdered eggs can also be used as a facial mask & can also add to my dogs food. Eggnog would be good too! Ty for this. Gonna do this
I should have done this to my eggnog in December because of being sick I didn't feel comfortable to drink that much sugar so it would have helped if I could have dehydrated it and I could have been enjoying it now, oh well. Next year I will get extra every time and I can have it all year long, I guess I probably can make it so that sounds like a great project! Thanks for sharing you're ideas and take care!
Heidi, try adding a pinch of cayenne pepper to your dehydrated cheese to give it some sharpness again. There are recipes online for cheddar cheese pecan crisps (butter, cheddar cheese, all purpose flour, salt, cayenne pepper, garlic powder and either chopped pecans or a pecan impressed onto the top of the cookie/crisp) that gave me that idea.
I'm so happy to hear dehydrated eggs are tasty! This time of year I get close to 2 dozen a day. I do lime some but dehydrating is so much of a space saver! I got some silicone trays with edges yesterday, so today I'm dehydrating eggs. I can't wait to try them. Freeze dryers are the thing these days on a lot of homesteading channels. Its nice to see your experimentation with dehydrating. Freeze dryers are so pricey!! Thanks for all your hard work! 😊
So many people like the claim that the freeze drying holds back more nutrition than dehydrating does, but I feel any nutrition in your food is better than no food at all, in the freeze dried stuff also takes up a lot more room
They thing that most of them do not realize is that "extra" nutrition it holds is pretty much only vitamins C and A, the very same ones that will be lost once they cook those foods. The problem is they only read or hear the advertising to sell a product that is based on truth without doing the full research to understand what exactly are they comparing, which is what I did. The comparisons were only measuring a couple of nutrients against foods dehydrated at higher temperatures (140 rather than low temperatures like I do (rarely ever higher than 115°). Then they go on about how it lasts MUCH longer in storage but this only applies if they are keeping them in the containers they came in, it does not account for food people freeze dry themselves and store in glass jars that are exposed to light, which will also destroy the vitamins that were preserved in the freeze drying process and if only kept in cool storage, regardless of packaging.

I’ll give you a not often shared restaurant trick. Whip your 3 eggs up really well to get as much air as you can into them. Have your non stick pan hot and pour in. Don’t do anything. Let it start to set. Turn your broiler on high. Once you see the bottom has set pop into the oven with door open. When the omelette puffs up take out, quickly add your heated additions and flip one side over. Add your cheese and pop back until hot and melted. You will be amazed, it’s no fail and the fluffiest omelette you’ve ever had!
Cheese in cornmeal muffins with diced ham or fried sauage.
I don't have chickens and a lot of eggs that are extra so I buy some powdered eggs at Sprouts so it's an option too. I did an ol fart thing last year when I got the silicone trays for the dehydrator which I got second-hand.. I got the normal trays and then realized that the dehydrator is a Snack Master.😄 It's kind of a grumbly lesson but it will work out for the best anyway. I discovered that some of the trays are warped so I'm gonna get the full sized one. I Will some more get eggs and cheese at some point!

we omit the eggs in mayo and use aquafaba instead. We also dehydrate aquafaba and rehydrate it although I haven't tried the rehydrated aqua fabba in the mayo yet. We do dehydrate a lot of eggs now also and use powdered eggs in place of scrambled eggs. We are finding the just egg really hard to find and it's crazy expensive now. You wouldn't know the difference between the fresh and powdered eggs when scrambled. You provide so much really valuable information that helps so much. ty for that.

I save my yeast jars Thay are dark, and I put my eggs and cheese in Thay are small but stel a good amount I vacuum them in a large jar then when they are done take them out of the large and store them in a Smal box. (works for me )

My local grocery store had organic free range eggs for .99 cents yesterday because the sell by date was coming up soon, so I bought all 10 dozen they had. I did my first batch of eggs today. I couldn't really get it into a fine powder. It's more like a finely granulated texture, but i'm hoping it will work. I have another batch in my Cosori now.

Love love love! Im so excited to hear that this went so well. The thing I think the egg powder would be great for is making Challah. I always forget to set an egg out to come to room tempurature. This is going to allow me to just add it to the dry ingredients. Wondering how the egg powder would do as an egg wash for the top of the bread. I always hate how there is egg left over and try to save it but have to admit it sometimes goes to waste. Wonderful information Heidi! Thank you so much.
I'm dehydrating eggs thanks to learning and I use the oil thing you taught us to seal it until I have enough for Mylar bags. Whole eggs, egg whites for flour replacements, egg yolks and I saw a video on scramble eggs with polenta dehydrated so it can be rehydrated without being rock hard scrambles that people have said it turns gritty if cooked before. I recommend to first timers that may be intimidated is to start with the egg liquids in stores. But for the brave just make sure its super mixed because thAt yolk needs to be balanced. So excited to use them for breads and pie crust.

I get 72 eggs into a quart jar when I dehydrate mine. I've had some jars 5 yrs due to getting pushed back by mistake and they are still good.
At what temperature do you think they will start to go bad?

Great tips, I'm getting a dehydrator soon so this will come in handy! I just watched a video that RoseRed did using the liquid from beans to create a mayo substitute you may want to check that out in lieu of using eggs.
Pretty happy with how the frozen eggs work and since they are eggs from my own chickens, it just gives me another use for them

I am going to start saving my eggs. I wish I could raise chickens but our stupid HOA won't allow them. Maybe when eggs hit $12.00 per dozen, they'll reconsider. Who knows.

I just bought a dehydrator which has a thermostat-my old one was set at 165 and I tried a handful of cheese the other day on a tray to see what it would do.....well, I had a nice little pancake of cheddar cheese, sort of like a big chip! LOL

The cheese powder is great on salad or in homemade salad dressing.
I have dehydrated many things and had great success. But my broccoli turned dark. It taste alright but looks a little withered. I dehydrated it from frozen not fresh. Have you tried broccoli? I have decided not to do anymore 🤣
I am buying it freeze dried which is amazing. I have struggled with buying or not buying a freeze dryer, but the cost...has leaned me toward not. Freeze dried foods are very expensive, and take up more space. I can, freeze and dehydrated, but I love the idea of the longevity of freeze dried foods.

Did you blanch before dehydrating?
Some foods are best slightly blanched before dehydrating and I would assume broccoli is one of those. Potatoes are another.

Ducky day, no I did not blanch because as I said, I dehydrated frozen broccoli, which should have already been blanched. I have also dehydrated frozen corn, green beens, mixed veggies and carrots. They have all done great except the broccoli. Just strange to me.

I hate dehydrated broccoli. I did the blanching and all that Everything exactly the way it should be, but the taste and texture is disgusting. But, you can still powder it, and use it like that so it’s not a complete waste. There are some things that just turn out really crappy dehydrated, unfortunately. That’s where powders come and save the day.
My college dorm cafeteria had really weird scrambled eggs. My dad listened to my description and, based.on his Army grub memories, said they were likely powdered eggs. I look forward to trying some homemade to see how the flavor is. I'm betting the commercial products have chemical additives.
Yes, the additions were likely part of it but they were also likely precooked before dried rather than kept raw. Keeping them raw is better for flavor for scrambled eggs and better for baking
I dehydrated some cheese, I left it in shreds. I tried to use it just adding it to taco soup like I would from the fridge, it got clumpy and stayed kinda hard 🤷♀️ I think I'll try to powder it and see how that works
Powdering makes it easy for turning into a sauce so I would assume it would work well in the soup

You can find them by doing a search for "Tamale Pie" or "Mac and Cheese" and adding the words "Rain Country". They are both at least three years or more old so I had not tried the cheese powder in them but will soon, at least for the mac and cheese

Any eggs can be dehydrated, I just brought that up because for those of us who have chickens, it is egg season, haha
*Thanks for the update!* Really helps us to see these items past their first preparation. How long do you think they will really last? _Can they "go bad" eventually?_
The only reason I would see them going bad is if they are not stored in a cool pantry. Fats of many kinds can go rancid if stored in a too warm of a climate. And too much exposure to light can reduce the nutrient value, which will depleted a bit at a time over the years.

You do not need the silicone if you are using the Ball lids with bands but if you are putting such things up for long term you can really persevere the freshness vacuum sealing. All you need are the foodsaver tops: amzn.to/3L7hF3M

I have not done wax cheese, but I have made homemade cheddar with raw goat's milk. I then used my vacuum sealer and put them in the back of my refrigerator to age.
I have made cheese from raw goat's milk but not cheddar specifically. I was wanting Patrick to make me a cheese press at some time but forgot about it once we were unable to keep getting the local raw goat milk
@@RainCountryHomestead I made a cheep one with 2 cutting boards and long bolts. Then I stacked cast iron cookware on it.
@@RainCountryHomestead I used this recipe. I have only made it three times. The first time was playing cheddar, the second time I added dehydrated caramelized onions and dehydrated bell peppers that I dehydrated. And the third time I added Italian seasonings.
I am really do want to try both of these methods. Question, how is the dehydrated milk coming along?
I only did a small batch to try it to make sure it would work. We buy fresh milk to keep fresh and organic whole powdered milk to use as needed and for long term. It is really not worth the time and cost for my to buy fresh organic milk and dehydrated it but I did it to prove it can be done and is just as good as the kind you purchase
Have you experienced oily “powdered” cheese after you’ve tried powdering it? I’m not sure what my next step should be because it’s quite clumpy due to the amount of oil still present.
Howdy! My wife and I love your videos! So I had a failed attempt at dehydrating eggs. Raw, spread thin, for 19 hrs! Way longer than what I've been understanding on how long it takes. When they were crunchy, they still had an oily film. Is that normal?? I used store bought eggs for my first try. TIA and have a great day!
Yes, that is normal and I am sorry I keep forgetting to tell people that. It is simply the fat from the yolks settling on the surface and it is best to save as much of that as you can. They will still powder up just fine.
Learning so much! Please don't judge but is there a way to long term store my favorite cracker CHEEZ IT? I don't have freezer space. These have 7g fat per serving so probably can't vacuum seal huh?

What do you do when you powdered the eggs and while in the jars, waiting to be sure they are dry (dryed for 24 hrs and looked/felt totally dry), you notice a little slow release to the jar and a little 'clump?' I am thinking of vacuum sealing them in bags and freezing it!? Thoughts?
I also dehydrate our own fresh eggs but I get a glossy oil residue on my eggs. For this reason I have kept the powder in my frig/freezer instead of vacuum sealing for storage like I wanted too. They cook up great just not sure how well they will keep at room temp. Any suggestions? Thanks for the videos.
I tried that a couple days ago and had those results from a video that said not to mix the eggs up so much. Which was a fail for me.
I found an older (9 years ago) video where a lady had blended them extremely well and I will be trying that next.

Sorry, some how this one slipped past me earlier. Yes, that oil residue I keep forgetting to mention is totally normal and should be left. It is the fat from the yolk. Just like any fat, it simply needs to be stored in a cool pantry or root cellar but you can also freeze if you do not feel you have a cool enough area in the house to store, it will still take up less space the undried eggs
Also I will add in regards to following comments that I find it best to mix them well and even with the fat, they process into a powder just fine

Yes, mostly, but it is also good to try to limit other light exposure from light bulbs as well. So only turn on lights when absolutely necessary or keep more delicate things in boxes, buckets, et cetera.

The best way to figure out the ratio is know now much you are dehydrating. If you dehydrated a cup fresh and after dried and powdered it was only a 1/4 cup, that means you use 1/4 cup of powder to one cup of water to rehydrate. More water if you are making it a sauce

Thank you for so much great information! I don’t know what temperature it gets to in Aug & Sept in southern Texas, when the electricity goes out. I’m still trying to figure out how to keep perishable food cool. I see all foods as perishable if they get too hot, cans, jars, etc. Keeping people cool is something else I’m trying to figure out. I don’t know that leaving windows open would be safe these days, except maybe putting in a nail so they would open around 6”. Ideas anyone? I would appreciate it!
Regular fans do not use as much power as an air conditioner. If you ca manage a generator of some kind keeping air circulated can do a lot to keep things cool and it is best when it gets hot to keep the windows and doors closed all day and only open at night. If the windows are side sliding, then you can simply put sticks in the track that only allow the window to open so far.

No, I have not but I really do not separately rehydrate it, I have just been adding it to things as is
My pantry is usually about 75 to 78° is that OK? I live in Central Florida so I don’t really have any cold days or a basement
Would mixing a nutritional yeast in the cheese help with the flavor or would you loose storage time?
Since nutritional yeast stores very well too, I think it may be a great idea. The thought did cross my mind at one point but Patrick does not like the flavor of nutritional yeast so it would have to be something I added in separately
Try adding some fat back into the cheese powder butter would be a good choice or a little oil of your picking try it I think you will see better results
Yes, of course, butter is what I typically use in making macaroni and cheese with it.
