Chicken Forestier With Wild Mushrooms

    Chicken forestiere, or poulet forestiere for Francophiles is a classic French dish of chicken in a rich wild mushroom sauce. This is a great place to use a variety of summer or fall mushrooms that are coming up right now.
    Like a lot of traditional recipes, there's a few different ways you can make it. I prefer to use whole chickens, braising the legs for this (and keeping the skin crisp) but it's also a fantastic way to use boneless skinless chicken breasts, if that's your thing. I demonstrate how to make both versions in the video.
    For an epic sauce, go out of your way to make demiglace sometime-this is a perfect example of how to use it. I like to freeze my demi in ice cube trays for easy portioning.
