Soba noodle shop invented a way to make too delicious concentrated men-tsuyu

  • We have created "concentrated men-tsuyu," which many people keep on hand at home as an all-purpose seasoning. You can make 24 bowls of cold soba noodles at a cost of 63 yen per serving.
    The cost varies depending on the ingredients, but I think it is quite cost-effective.
    Please try making the soba noodles we have uploaded in the past with this sauce.

            Ingredients
    290 ml dark soy sauce
    310 ml light soy sauce
    160ml mirin (sweet cooking rice wine)
    70g granulated sugar
    140g dried bonito flakes
            Preparation Method
    Put mirin and granulated sugar in a saucepan and stir over low to medium heat until the sugar dissolves.
    2. Turn off the heat and add the dark soy sauce and light soy sauce.
    3. Add hana-katsuobushi (dried bonito flakes) and turn up the heat.
    4. Reduce the heat to medium and simmer for 2 minutes until the mixture starts to simmer.
    5. Turn off the heat and leave at room temperature until cool.
    When cooled, strain the mixture and put it into a container. *Squeeze the dried bonito flakes until the water is gone.
    7. Let sit in the refrigerator for 3 to 5 days to finish.
     It will keep for about 3 months in the refrigerator.
           How to divide the sauce
    Zaru soba (for 2 servings): 50cc of soy sauce to 100cc of water
    Bukkake-soba (for 2 servings): 50cc of soy sauce to 150cc of water
    Kakesoba (for 1 person): 50cc of soy sauce to 300cc of water

       Recipe using dried bonito flakes
     
            Ingredients
    Dried bonito shavings (a little bit of bonito flakes)
    1 egg (as shown in the video)

    Put the daikon flakes in a pot and fill it with water until it is submerged in the daikon flakes.
    2. Turn on the heat and bring to a boil, then reduce the heat to medium and simmer for 5 minutes.
    3. Using a strainer or paper, strain the dashi and return it to the pot.
    4. Bring to a boil and add beaten egg.
    *Since the seasoning is soaked into the dried bonito flakes, you can take the broth as it is and get the flavor at the same time.
    If you like a strong taste, please adjust the seasoning.
    It can also be used for onigiri (rice balls), udon noodles, and boiled noodles.
