I grew up an hr away from New Orleans. Around here it's sacrilege to mix land and sea in a gumbo
Creole here, not sacrilegious for my family because food is food. Nothing goes to waste. Shrimp and Pork or chicken will go into a dish together.

Shrimp would cook away but that is not gumbo
That's why you add the shrimp 3 minutes before it's done or cook it separately and add it on top
