    In Germany there was a Ice Cream stand around where you could choose from liquid ice cream premixes. When you ordered, they put some of it into a KitchenAid machine, put it on maximum speed and then poured some liquid nitrogen into it. Every customer said that it'd taste a lot better then what bigger ice cream shops sell. The founders said that they didn't use flavour enhancer since shock frosting makes the original flavour much more intense.

      LN2 isn't a protected substance, and not that expensive really. It's not that hard to get ahold of.

      @@timothycook4464 Well, *some* people don't have access to it. Most people actually only have access to just a dollar store and a walmart. And not to mention not everybody has a freezer that goes to -321F (the evaporation point of nitrogen). So even IF you find a store that just casually carries liquid nitrogen, you have to have a way to store it, otherwise all you get is just a jar of nitrogen gas.

    if you were to use a whisk instead of a spatula it would allow for lighter and smoother texture for you ice cream

      james snook Or even better if you were to use a stand mixer with a paddle attachment that would scrape the sides of the bowl it would serve like a dasher in a standard ice cream freezer and give a run rate (air percentage) of between 35% and 50‰ like a super premium ice cream. Another option to make a French vanilla style of ice cream is to make an actual cooked and cooled thin custard then freeze it with the nitrogen. But that's more like cooking than science.

      The cap is basically designed for keeping air out.
      So when you shake them vigorously, you need a finger over the hole. Otherwise you wind up with splattered walls.
      I just followed the instructions and I tried using just the cap. Took 2 hours to clean up the mess.

      Oneway Luis freeze salt water into ice cube trays, put those ice cubes in a bag and then mix your ice cream into another separate bag. Put your closed bag of ice cream down into the bag of ice and then shake. The cream will get cold and freeze. Won't make balls but will be delicious.

    Keep in mind that vanilla extract contains at least 33% alcohol, (35 in some). That can change the way things taste. Vanilla extract is usually best for cooking/baking as it will evaporate the alcohol. You may want to try an actual vanilla bean.

    I would highly recommend making your own vanilla extract as it tastes so much better than most store bought extracts. To make it just buy some whole vanilla beans and put them in a bottle full of plain vodka and let it soak. It will take a couple weeks before the vanilla flavor gets strong enough to use but once its ready just use it with the beans in the bottle. If it ever gets low just add some more vodka and I would suggest replacing the vanilla beans every 2-3 years.

      It evaporates, so you never actually consume any.

      You are breathing nitrogen as you are reading this. Air is made of about 70 percent nitrogen. Also it's a noble gas so it doesn't react much. Also it evaporates off like the others have said.

      Are you talking about coating the sand with a hydrophobic coating or melting sand? If you melt sand, you're basically just making glass.

    What if you put a cookie cutter onto the plate and put the ice cream mix in and then you put the liquid nitrogen in it? Would you essentially get ice cream shapes?
