Grew up in Alaska and always enjoyed picking raspberries, rose hips, rhubarb and high bush cranberries on my way to school. My mom could do amazing things with moose meat!
Love this! Reminds me when we would go in the woods as kids and chew the wintergreen. Eat the red clover and nibble on the sour yellow sorrel, we never knew the name of it, but knew it by sight. We also would pick the mushroom buttons to sautee in butter and onions. I forgot what we would hrab to nibble on the woods as kids and your show has peaked my interest in foraging again, 50 years later...
This series has been a blessing. It has brought me even in just a few moments of time an immersive peace that is lacking in my life. It looks like bliss out there in nature, what a beautiful thing.

Yo obviously Les is the survival, wild edible expert but as the episodes keep going on I'm so impressed by Paul. Gotta keep coming up with creative dish ideas using unfamiliar ingredients. Sounds fun but also stressful to come up with new stuff all the time!
After a few episodes, I'm hooked. Had no idea this show existed until yesterday. Good to see Les doing his thing again. Teamming up with Paul, you are an absolute genius chef, gives the show an authentic quality. Whomever is working behind the camera is a master as well. Great editing and writing on top of it and voila...a masterpiece of a show. Love it!
Any chance Les and Paul do a forging/cookbook? Basically just replicate what was gathered in book form and the specific means of cooking the various dishes?
Best episode so far, and my favorite season. I love encountering Grouse when in the north of Quebec. That's an inefficent way to pluck it though. Dip the bird in hot water and the feathers come off far easier

I have some craterellus falax and some rubis occidentalis I will be harvesting tomorrow. I will also be keeping an eye out for some plurotus species,which are prolific amongst the deciduous trees that I forage amongst.

This is an amazing series! I'm so glad you guys did this. It would really be enjoyable seeing more of the process or instruction to the food prep/cooking. So many of the same plants around here!
People dont always understand why the strip of bark from all the way around is so bad. Just below the outer bark is the cambium, the green part where the tree is alive. If the entire circumference of the tree is stripped of bark the tree can no longer move sugars up and down from leaves to roots. Dead trees are best and second best is to take a patch of bark that is cut out vertically so the rest of the tree still has the ability to flow.

Always been interested in Les’s use of Rose Hips. There’s a distillery here in Chicago that makes a Rose Hip Liqueur. It tastes a little like sweet vermouth but a little sharper and less sugary. Worked great in a cocktail I was making.
This is what it's all about. From the intro start with the fall colors to the wild grouse and all those really amazing wild edible add in's your video is a dream a very pleasant heart warming dream in which i get to share what you love which is also what I love. Wonderfully and masterfully put together and I thank you for that. Ends my day with a smile.
I like a challenge…however just getting the weekend off to be able to even get in the woods and eat the most basic meal, is accomplishment enough for me.
So many great ideas. Food for thought. I have never had grouse before, but there are plenty of them at my camp in Maine. Just got the camp last year. Grouse coming up! LOL.
