Hello Jessica, I am a bit overwhelmed with the produce coming as I am recovering from a severe cellulitis on my inner thigh. 2 weeks out of hospital. But this past week I have frozen 6 meals worth of green beans, 3 hug cantaloupe from local farm, cubed and frozen, 8 lbs fresh figs quartered and frozen, today I used up 3 1/2 pints of cherry tomatoes from garden and made a cherry tomato pie for dinner and one for the freezer. I have a bit of peaches ripening and a box of fresh picked pears ripening to work with on Wednesday. Tomorrow I need to make pickles and blanch and freeze purple cauliflower from my garden. You inspire me to just keep swimming. Thank you!
Well since you asked, I drove 13 hours yesterday to preserve the life of two dogs! Not pantry related but the best kind of preservation❤ IMO, you have such wonderful children..helpful, caring, practical and fun! Just like mom and dad.
I hate deep cleaning. I have no issue with day to day & I don't just leave something & say.... "When so & so comes in she can take care of that." But our mental health is very important & having not only family help but if bringing in outside help is what is needed then do it. I have Fibromyalgia & on the days I feel well & can really get going, I pay for it with a week of pain that makes me feel like I have been beat with a stick. Where just standing up can bring me to tears. I believe we all have something that we need to do to bring us peace & we need to do it.
Hi Jessica. It's so interesting to see all the different kinds of preserving that people do. In all honesty, I don't think I could eat an egg that is 18 months old, but kiddos to anyone who does this. I've said it before and I'll say it again, you are such an encouragement to me, especially now in my life that I've been struggling a bit with depression. Thank you for all your honesty and great content that you give. I pray for your wellness always, but I must say, it never shows that you have anxiety or anything, you are amazing! ❤
Hello Jessica and sweet family! Water glassing eggs in a 1/2 gallon jar is perfect. As klutzy as I am at least if I dropped it it wouldn’t be all I had. I have used mineral oil rubbed on the eggs to preserve them too, it works. I’ve been going through drawers and shredding papers. I’m going to go through my walk in closet and get rid of stuff in there. Yes Kodi, I like cleaning in my pjs and that way when I get done I take a shower. I’m not going to kick myself if I don’t get everything done that I plan in a day, it will be there tomorrow. I had to work on plumbing this week, but I got it fixed. God Bless Wyatt for helping do his room. I used to be a shoe hoarder, but not anymore. That was a hard addiction for me to get over. Good for you getting help when you need it, no shame in it. I’ve been trying to get organized for the last year. I couldn’t understand why it was so difficult. My energy was nonexistent and mentally I felt exhausted all the time. I was taking 3-5 hour “naps”. It turns out I have leukemia and now I’m starting my cancer journey. At my age ( 74) I’m in the final quarter of my life and I’m determined to live a full and joyful, conscious life and not be angry over my diagnosis. One day at a time, always find something that makes me laugh out loud, and try and do a kindness for a stranger. It’s all good, everyday is a blessing, and enjoy every minute you have left bc when it’s gone so are you. Lol

Today I started processing the garlic I grew. I also cleaned and organized my medicine cabinet which unfortunately is larger than most. I have had anxiety the last several months as well. I just need to get things in order. I don’t want to leave my children with a bunch of crap if anything were to happen to me. Slowly but surely I will get it done.

I am working on cleaning my house in anticipation of a move. I have really been dreading working on my sewing room. I have most of it packed, and I couldn't see the day bed in it. Today, everything came off that bed, and it is now clear. I'm really happy to have that all done now.

We were in that transition time, from kids toys to electronics and other items. So we had 2 bags of trash and 4 bags of donate of toys and stuffy animals. Wash walls, ceiling and baseboards. Needs a paint refresh, but I'm totally happy to have that done.
I have been incredibly stressed the last few weeks. For the first time in years fir me and 40 years for my 87 yr old mom. We are renting. The place in very nice. 2 weeks ago my mom started packing up her room. When I asked her where we are going she said, "I don't know, I just feel like packing". We have 3 months left on our lease and I don't know if we are coming or going. It was driving me crazy trying to understand what she wanted, so one day she says we are staying and the next she is packing. Today, I felt like the Holy Spirit told me to go get her boxes like she asked last week. So I did and for some reason I suddenly feel at peace, since I know God has it in his hands.

My granddaughter and I emptied an old van of basically garbage so we can get rid of it before winter. Got to make room for the snow piles, lol. Thanks for the encouragement
I today have been able to put up my baker's rack and put everything on it that I needed to instead of being in my laundry room and was able to get out my fall stuff to decorate

Always good to think about your future self. No house is ever perfect, a house should be home that is lived-in and loved! That is what helps kids feel like kids and if you are always focusing on perfect you are missing time with those who are more important then perfection. You guys are busy and sometimes it was it is you have to except the season you are in.

If it’s ok to be brutally honest, I am doing good to maintain the dishes daily. For some reason I am able to hide my depression more recently so it’s a silent struggle that overwhelms me when I’m alone. So I watch homesteaders to be motivated to wash my dishes and shower daily. Those are my threads. I cling tightly to them. So yeah. I’m so happy to see you improving and moving forward. A glimmer of hope 😊

Your on your way to getting better, knowing that you're doing things for YOU is a huge realization. Last time I committed that you conquered the organization, and that you need to communicate that to the rest of your family so everyone is on the same page. I'm more of an OCD type personality...cleaning and organizing are relaxing for me. My children grew up with me telling them " A PLACE FOR EVERYTHING, AND EVERYTHING IN IT'S PLACE ." Unfortunately they aren't me, and they have a hard time with keeping their homes tidy, it's clean, but things like throwing away wrappers and empty soda cans seem to hard for them. I sometimes think maybe they are the way they are, because of spite for me. But yet if they need help with anything, they know I'd be there for them in a heartbeat. ❤ They have organized their kitchen's pretty much the same as mine. Now the bathroom...that's another story. Lol. That's 1 of my pet peeves...products all over the vanity, hair in the sink/shower, wet towels not hung up to dry...and the men are just as bad as the women. Bottom line...we all deal with anxiety, at different levels, on any given day. The key is to ask for HELP AND EXCEPT IT! OH, AND SOMETIMES YELLING HELPS TOO!😊
You and I think so alike! I have a maid once a month and it helps keep my sanity 😃. I just get overwhelmed when things are so out of order, but picking up and putting away once a month, helps so much to keep all together. Love ya 💕
It’s honestly so helpful. I didn’t realize in my struggle Kodie most of been struggling too. Now she is just so on top of the whole upstairs without me asking anything. She just keeps decluttering and carpet cleaning and all the things. It’s amazing what a little help can do for someone.

I try to do something on the list every day. Today I felt slower and not willing to do as much so like you I give myself self care space to take it easy on slower days. I did laundry and got a few blankets washed too. I clean once a week. Yesterday I also cleaned up the garden and each morning I bring in new produce and have been working on freezing peppers and tomatoes. I love to organize things! Today I concentrated on clearing surfaces, I can clear my dinning room table and within 24 hours more stuff finds it's way there, how does that keep happening? I don't have a cleaning routine, I find myself chasing and playing catch up more often than not is part of the problem I'm sure. But ya'll are so encouraging, I just keep diggging in 😘

I have a tick list I update daily, my to-dos. I used to be the sole person responsible for doing it all, but age teaches you you can hand off and get help!! Our house keeper and my sweet retired husband help me conquer chores. As I listened to you talk , just now, I have picked up what has gone wonky in my kitchen. Now off to bed to be rested for tomorrow!! It is “Debbie Day”. I wasn’t home most of the day, sounds like I’ll be having bilateral carpal tunnel surgeries soon. Always something!! Today I also water glassed 25 fresh eggs. I boiled 20 eggs to pickle. And made 8 half pints of bourbon plum butter. I will complete the egg pickling tomorrow as well as make bourbon plum jam with the leftover juice from the butter. I really enjoy watching your videos. Thank you for sharing your life with us. I love water glassing eggs! This spring before my ducks started laying outside, I was able to preserve a gallon and a half gallon of them. I will do my chicken eggs in the next few weeks. You did it perfect. I do suggest to some people to buy a gal of pure water, if they have chlorine in their water or a water softener, that puts salt in them. I made 6 pints of mock pineapple, 4 pints mock cherry, and 4 pints of mock apple, from zucchini. I actually decluttered my buffet'. It had to many cards and things that were from Bubba. Its been 3 1/2 years! I just couldnt read them, or see his writing. But i got it done this week. Thank you Jessica.
Well done! This week I was intentional that if I saw something that needed to be done & wouldn’t take long (ex: dust ceiling fan, wipe down window ledge, dump out old food in fridge, etc) I just stopped and did it. Yay! Most of the time it takes 5 minutes or less and then I feel better.
I have been feeling extremely unsettled for the last month or so and it has taken a toll on my mental state with my PTSD and anxiety.... with that said let myself have today just to snuggle with my dog and to feel the unsettled energy and emotions to be able to start anew tomorrow, but first before I settle in for the night I'm going to water and tend my house plants then a bubble bath for some much needed self care... blessings to you and yours

Hey Jessica, You are so awesome and love every signal video you share with us. I put up 600lbs of tomatoes, 20lbs of beans, put up a bunch of blueberries, blackberries and then started deep cleaning my house for the holidays that are fast arriving here soon. Depression is a struggle i have been there a few times. I just have to remind myself its just a season and I have to do what makes me happy to pull myself out of that state. So deep cleaning is where I’m at in this season. Then in a couple weeks its canning up all things apples. Take care god bless be amazing as you always are.
It was a long two days of work. But well worth every minute of it. I don’t have enough for a year but close maybe 10 months. So I just place an order with one of my local farmers for 200lb of tomatoes and 4 bushels for peppers. My garden didn’t do well this year so I’m supporting a couple local farmers. @@modernhomesteadalaska
I am just starting my journey to organize my life and downsize to declutter my brain and my heart. I was just let go from my job after 6 1/2 years ( unexpectedly) and I have been beyond depressed. I am so encouraged by you and your honest struggles (same as I have) it means the world to me and gives me encouragement. I buy eggs from a small family homestead but I’m interested in water glassing. Please let us know how they taste, that’s my only concern haha. I started water glassing almost 2 yrs. ago & while we do not keep them for 18 months, the glassing does work, the eggs taste like eggs! We have not kept them for longer than 6 months, but I know some that have & they say the whites can become watery but they cook up, bake up & taste exactly like a fresh egg otherwise.

Well..I made a friend a large macaroni salad and her wedding bouquet and in return she thanked me with some huckleberries. I need to get some supplies but I intend to make huckleberry jam this weekend..picking zucchini and shredded and froze for future bread and muffins....that's a few things😊

A neighbour just bought me a load of tomatoes,this is the third load, so today i've made chutney with them. Also i had to thicken my lemon marmalade i made early this season. I'm actually in mourning, sadly my Aunt died over the weekend, she was 91 and a bit! [her words not miine!] I tend to bake when im sad, so preserving helps not to eat baked goods!
I made vegetable broth and honestly that was about it for the week. I manage to keep the dishes done and the laundry caught up but really struggling with depression and not being able to motivate myself.

Watching the minimum mom and the ClutterBug have really changed me big time cell.. every day I throw something away that I’m just holding for no reason it feels like I accomplish something on a daily basis ., Plus having a house there’s always need my house is 1925 so it always needs an update here and there I mean I look at my house and I’m like I gotta do this. I gotta do that let’s jump forward and we’re empty-nesters, but I still feel the need. We do have a new grandbaby, so I am doing it because of her
For the everylittlebitcounts challenge I managed to get 241 jars on the shelves (with a total of 1,465 so far this year), although the shelves are a disaster right now--haha. I have had to purchase more shelving and I have big plans to get the basement re-organized. Hubs has to get a few more pieces of plywood cut for the new shelves so the jars are safe. For now, I'm just stacking in my jar boxes to have somewhere for them to be. We had to cycle through our deep freezers and do a thaw cycle on all of them, which meant cleaning out, and taking inventory and getting at least one at a time empty, what a chore that was! It just reinforced that I needed to do more canning, plus hubs managed to get three large batches of wine going, telling me he had wayyyy too much fruit in the freezers! LOL I managed to get 45 quarts of ham and bean soup out of it, plus some other fruits into jars, and some jellies. I've been drying herbs on trays all over the place, I've been running the dehydrator for days on end, it doesn't seem to stop. I feel like I need at least one more of me, as the working outside the home me doesn't have enough home hours to deal with the working at home me, if that makes any sense whatsoever. Point is, I'm on the struggle bus too, just because I can't do all that I want to do, I don't have enough me to accomplish it. I'm glad you have someone that can help you clean, that is a tremendous load off when we are in the busy times of our lives with so much going on, and it is definitely a great self care item you can give yourself. I'm proud of you for acknowledging that in yourself, and being willing to find ways to adapt for that to help your well being. I have the next week off with a three page list of things to get done, which includes some of the items that I have just not been able to tackle for lack of time and my ability. To most it would be a vacation to have that many days away from work. For me, it's work outside of work. I may never take another vacation in my life...lol :) And that's ok, because I enjoy this, I am proud of all I do, I am happy that I am able to take care of our family in the ways that I do, I enjoy the sweaty, dirty days in the garden, and the sweaty, hot kitchen while I am preserving all of it. I think my lot in life is to just get stuff done. And I'm doing it! Hope you have the most wonderful weekend, lady :)
I broke my ankle and ruptured my Achilles tendon. I'm in a cast but have managed to can pizza sauce, salsa, cowboy candy, bruchetta, and coleslaw. Today I washed windows and curtains .
I did this for the first time this year.. so the other day I cooked couple of eggs, and a couple of water glass eggs. Couldn't tell the difference.. So looks like I'm water glassing egg for now on..
I want to try this method once I get chickens. ha ha ha clean??? I'm still trying to get my water flowing to the cabin so I can actually take a shower here.

This is one method that's the most dangerous way to preserve. None of my grandmothers or great grandmothers did this. They all said it wasn't safe. Even using wood stoves they would seperate the egg whites and yolks and dry the eggs or certain chickens would be moved to a warmer part of the barn and a light was used to simulate daylight.

In all honesty, I don't think I could eat an egg that is 18 months old, but kiddos to anyone who does this. I've said it before and I'll say it again, you are such an encouragement to me, especially now in my life that I've been struggling a bit with depression. If you have or know someone with a freeze dryer. Then you can just scramble your eggs and freeze dry them!

Hello Jessica and sweet family! Water glassing eggs in a 1/2 gallon jar is perfect. As klutzy as I am at least if I dropped it it wouldn’t be all I had. I have used mineral oil rubbed on the eggs to preserve them too, it works.
I’ve been going through drawers and shredding papers. I’m going to go through my walk in closet and get rid of stuff in there.
Yes Kodi, I like cleaning in my pjs and that way when I get done I take a shower.
I’m not going to kick myself if I don’t get everything done that I plan in a day, it will be there tomorrow.

I’ve been trying to get organized for the last year. I couldn’t understand why it was so difficult. My energy was nonexistent and mentally I felt exhausted all the time. I was taking 3-5 hour “naps”.
It turns out I have leukemia and now I’m starting my cancer journey. At my age ( 74) I’m in the final quarter of my life and I’m determined to live a full and joyful, conscious life and not be angry over my diagnosis. One day at a time, always find something that makes me laugh out loud, and try and do a kindness for a stranger.
It’s all good, everyday is a blessing, and enjoy every minute you have left bc when it’s gone so are you. Lol

Today I started processing the garlic I grew. I also cleaned and organized my medicine cabinet which unfortunately is larger than most. I have had anxiety the last several months as well. I just need to get things in order. I don’t want to leave my children with a bunch of crap if anything were to happen to me. Slowly but surely I will get it done.

I am working on cleaning my house in anticipation of a move. I have really been dreading working on my sewing room. I have most of it packed, and I couldn't see the day bed in it. Today, everything came off that bed, and it is now clear. I'm really happy to have that all done now.

I have been incredibly stressed the last few weeks. For the first time in years fir me and 40 years for my 87 yr old mom. We are renting. The place in very nice. 2 weeks ago my mom started packing up her room. When I asked her where we are going she said, "I don't know, I just feel like packing". We have 3 months left on our lease and I don't know if we are coming or going. It was driving me crazy trying to understand what she wanted, so one day she says we are staying and the next she is packing. Today, I felt like the Holy Spirit told me to go get her boxes like she asked last week. So I did and for some reason I suddenly feel at peace, since I know God has it in his hands.

If it’s ok to be brutally honest, I am doing good to maintain the dishes daily. For some reason I am able to hide my depression more recently so it’s a silent struggle that overwhelms me when I’m alone. So I watch homesteaders to be motivated to wash my dishes and shower daily. Those are my threads. I cling tightly to them. So yeah. I’m so happy to see you improving and moving forward. A glimmer of hope 😊

Your on your way to getting better, knowing that you're doing things for YOU is a huge realization. Last time I committed that you conquered the organization, and that you need to communicate that to the rest of your family so everyone is on the same page. I'm more of an OCD type personality...cleaning and organizing are relaxing for me. My children grew up with me telling them " A PLACE FOR EVERYTHING, AND EVERYTHING IN IT'S PLACE ." Unfortunately they aren't me, and they have a hard time with keeping their homes tidy, it's clean, but things like throwing away wrappers and empty soda cans seem to hard for them. I sometimes think maybe they are the way they are, because of spite for me. But yet if they need help with anything, they know I'd be there for them in a heartbeat. ❤ They have organized their kitchen's pretty much the same as mine. Now the bathroom...that's another story. Lol. That's 1 of my pet peeves...products all over the vanity, hair in the sink/shower, wet towels not hung up to dry...and the men are just as bad as the women.
Bottom line...we all deal with anxiety, at different levels, on any given day. The key is to ask for HELP AND EXCEPT IT! OH, AND SOMETIMES YELLING HELPS TOO!😊

It’s honestly so helpful. I didn’t realize in my struggle Kodie most of been struggling too. Now she is just so on top of the whole upstairs without me asking anything. She just keeps decluttering and carpet cleaning and all the things. It’s amazing what a little help can do for someone.

I just recently found your channel - I absolutely adore you and your family - when I watch your videos, it brings peace to me - I hate cold weather, but watching you guys makes me think I want to move to Alaska. Today I also water glassed 25 fresh eggs. I boiled 20 eggs to pickle. And made 8 half pints of bourbon plum butter. I will complete the egg pickling tomorrow as well as make bourbon plum jam with the leftover juice from the butter.

I love water glassing eggs! This spring before my ducks started laying outside, I was able to preserve a gallon and a half gallon of them. I will do my chicken eggs in the next few weeks. You did it perfect. I do suggest to some people to buy a gal of pure water, if they have chlorine in their water or a water softener, that puts salt in them.
I made 6 pints of mock pineapple, 4 pints mock cherry, and 4 pints of mock apple, from zucchini.
I actually decluttered my buffet'. It had to many cards and things that were from Bubba. Its been 3 1/2 years! I just couldnt read them, or see his writing. But i got it done this week. Thank you Jessica.

Well done! This week I was intentional that if I saw something that needed to be done & wouldn’t take long (ex: dust ceiling fan, wipe down window ledge, dump out old food in fridge, etc) I just stopped and did it. Yay! Most of the time it takes 5 minutes or less and then I feel better.

Hey Jessica, You are so awesome and love every signal video you share with us. I put up 600lbs of tomatoes, 20lbs of beans, put up a bunch of blueberries, blackberries and then started deep cleaning my house for the holidays that are fast arriving here soon. Depression is a struggle i have been there a few times. I just have to remind myself its just a season and I have to do what makes me happy to pull myself out of that state. So deep cleaning is where I’m at in this season. Then in a couple weeks its canning up all things apples. Take care god bless be amazing as you always are.

It was a long two days of work. But well worth every minute of it. I don’t have enough for a year but close maybe 10 months. So I just place an order with one of my local farmers for 200lb of tomatoes and 4 bushels for peppers. I buy eggs from a small family homestead but I’m interested in water glassing. Please let us know how they taste, that’s my only concern haha. Got my peppers in the freezer until I have enough to make hot sauce. We all have to do things just for ourselves I like to think of it as service to self that isn’t selfish! You rock Jessica 😊
I started water glassing almost 2 yrs. ago & while we do not keep them for 18 months, the glassing does work, the eggs taste like eggs! We have not kept them for longer than 6 months, but I know some that have & they say the whites can become watery but they cook up, bake up & taste exactly like a fresh egg otherwise.

I'm actually in mourning, sadly my Aunt died over the weekend, she was 91 and a bit! [her words not miine!] I tend to bake when im sad, so preserving helps not to eat baked goods!

I made vegetable broth and honestly that was about it for the week. I manage to keep the dishes done and the laundry caught up but really struggling with depression and not being able to motivate myself.

Watching the minimum mom and the ClutterBug have really changed me big time cell.. every day I throw something away that I’m just holding for no reason it feels like I accomplish something on a daily basis ., Plus having a house there’s always need my house is 1925 so it always needs an update here and there I mean I look at my house and I’m like I gotta do this. I gotta do that let’s jump forward and we’re empty-nesters, but I still feel the need. We do have a new grandbaby, so I am doing it because of her

For the everylittlebitcounts challenge I managed to get 241 jars on the shelves (with a total of 1,465 so far this year), although the shelves are a disaster right now--haha. I have had to purchase more shelving and I have big plans to get the basement re-organized. Hubs has to get a few more pieces of plywood cut for the new shelves so the jars are safe. For now, I'm just stacking in my jar boxes to have somewhere for them to be. We had to cycle through our deep freezers and do a thaw cycle on all of them, which meant cleaning out, and taking inventory and getting at least one at a time empty, what a chore that was! It just reinforced that I needed to do more canning, plus hubs managed to get three large batches of wine going, telling me he had wayyyy too much fruit in the freezers! LOL I managed to get 45 quarts of ham and bean soup out of it, plus some other fruits into jars, and some jellies. I've been drying herbs on trays all over the place, I've been running the dehydrator for days on end, it doesn't seem to stop. I feel like I need at least one more of me, as the working outside the home me doesn't have enough home hours to deal with the working at home me, if that makes any sense whatsoever. Point is, I'm on the struggle bus too, just because I can't do all that I want to do, I don't have enough me to accomplish it.
I'm glad you have someone that can help you clean, that is a tremendous load off when we are in the busy times of our lives with so much going on, and it is definitely a great self care item you can give yourself. I'm proud of you for acknowledging that in yourself, and being willing to find ways to adapt for that to help your well being.
I have the next week off with a three page list of things to get done, which includes some of the items that I have just not been able to tackle for lack of time and my ability. To most it would be a vacation to have that many days away from work. For me, it's work outside of work. I may never take another vacation in my life...lol :) And that's ok, because I enjoy this, I am proud of all I do, I am happy that I am able to take care of our family in the ways that I do, I enjoy the sweaty, dirty days in the garden, and the sweaty, hot kitchen while I am preserving all of it. I think my lot in life is to just get stuff done. And I'm doing it!

I broke my ankle and ruptured my Achilles tendon. I'm in a cast but have managed to can pizza sauce, salsa, cowboy candy, bruchetta, and coleslaw. Today I washed windows and curtains .

I did this for the first time this year.. so the other day I cooked couple of eggs, and a couple of water glass eggs. Couldn't tell the difference.. So looks like I'm water glassing egg for now on..

How long are they shelf stable
Most people say a year to 18 months. Not sure though as I have never preserved eggs that way.
This answer is correct they say 12-18 months
I want to try this method once I get chickens. ha ha ha clean??? I'm still trying to get my water flowing to the cabin so I can actually take a shower here.

This is one method that's the most dangerous way to preserve. None of my grandmothers or great grandmothers did this. They all said it wasn't safe. Even using wood stoves they would seperate the egg whites and yolks and dry the eggs or certain chickens would be moved to a warmer part of the barn and a light was used to simulate daylight.

It is none of anyone’s business while you have a cleaner to come clean your house I do and I don’t care what nobody thinks I physically cannot and you are working on the same health physically cannot and if I’m able to do something I’ll do it and if I’m not I’ll leave it for the cleaning lady I don’t care what nobody thinks anymore right now nobody’s business it’s my house and my money
