Chicken Thighs with Quick Mushroom Ragu

- This recipe features succulent chicken thighs pan-seared in butter to golden perfection. Why chicken? Because everyone seems to love it! I think it's also the only protein left that hasn't gone through the roof in price! The star of the dish is however the 'quick to make' mushroom ragù, made from a blend of button and dried porcini mushrooms infused with aromatic herbs and a splash of red wine. Just wait until you taste this! as we say in French, Incroyable!!!
The dried porcini mushrooms (known as cèpes in France) are the star of the show, so no compromises, you need to buy some, (otherwise select another one of my chicken recipes, I think I have about 400!) The mushrooms are purchased dried then rehydrated to intensify their flavour which lends to a rich depth to the sauce. The sauce is then thickened with cream.
This hearty chicken meal delivers a symphony of earthy flavours, while a sprinkle of fresh parsley adds a vibrant finishing touch. Even Whiskey got a few nibbles of chicken, without the sauce of course!

Your butter always looks so good. Great butter has not been easy to find here in the States. BUT, because it's getting so expensive, grocery stores have decided, "Why Not?" So, they are stocking some great European butter. Makes a real difference in recipes, especially baking.
For sure, we are lucky here in Australia, most butters come from grass fed cows, so it's very yellow and not pale in colour. French butter has another fermented note which makes it even better, so I buy both. For baking look for high fat content. (less water)

Love mushrooms, growing by the woods, that was our meat,we even do caning off porcini mushrooms with onions, red bell peppers and tomatoes,yummy.

A wonderful recipe! Dried porcini mushrooms and saffron are real taste bombs for many dishes for me. With the mushrooms, you can turn a simple potato soup into a gourmet dish. Comes into my list: "Recipes of the Chicken Grandmaster" 👍

Hi Joel, it's Mike Florence and I trust you and Whiskey are well. Your Porcini Mushroom Ragu is just incredibly good. And yes, you show the perfect way to pan fry chicken; yum!!! Thanks very much for yet another gourmet recipe. I will make this exactly as you show. Then I might try adding a little Cognac to the Ragu and garnish with Perigord Truffle shavings. Thanks by the way for the Puttanesca link. Adding a little cheese before the Passata is such a neat way to improve the Tomato Sauce. I'll be using this tip in lots of recipes. My Joel, this must be DELICIOUS! ❤ But I want you to explain to me a cooking procedure. Because I cook a very similar recipe without tomato paste, and with white wine ! Tell me: why you fry separately the meat, and not integrate it in the procedure in the same pan? For example: after you add onion and garlic, you add the meat . You cook it, and take it out on a dish. In the SAME pan, you go on with the mushrooms and the wine , chicken broth, herbs, etc. And THEN, you add back the cooked meat and finish the cooking. In case you did not add flour on the meat to create thickness , you finish with corn flour to thicken your sauce, yes?? This is yummy on white rice!!

Do you trim any of the fat off the boneless, skinless chicken thighs? I never know how much to cut off. I don't like really chewy pieces but I also understand the fat melts a bit for extra flavoring.
