- If you like a good pork chop, then you will love this recipe. We are making Pan seared fit cut pork chops. This is a really delicious recipe, and a great substitute to a traditional steak. Si.ple and Delicious, just the way I like it.

I did different seasons, I cook on gas so 3-4 minutes in skillet per side. I am a 60 year old southern and this was the best pork chop I have ever eaten.

I had a pack of pork chops that I had cooked a couple out of,the day before I found your video last week. They were horrible and I didn’t know why. I’ve never had trouble cooking pork chops before, but I don’t think I’ve ever had thick ones like this. So I came looking for a recipe, thinking I had nothing to lose, because if they came out like the first ones did, I’d just open the back door and throw them out to whatever wild thing showed up to eat that night. I can’t tell you the difference! I didn’t have the same spices that you used, but I am quite proficient in the kitchen, and I’m used to changing out spices anyway. What I was lacking here was the technique of how to cook those pork chops, mainly so the fat rendered, and was delicious, rather than disgusting! I have saved this video in my recipes list, so I can come back, when I need to, to check oven temperatures and times, etc. Thank you for the best pork chops. I’ve ever eaten in my 70 years on this planet.😊

I cooked these last night and they were delicious! They looked exactly like the ones in your video. I used 3 boneless thick chops. My seasoning was Morton's Natures Seasoning and fresh ground black pepper. I followed your technique exactly. I put them in the 350 oven and set the timer for 15 minutes, checked the temperature and they were way past 145 but were delicious anyway. Thanks for sharing this recipe and I will be using it again.

Made these today. Used boneless chops, cast iron skillet, 15 mins in the oven. Should have cooked 8-10 mins using cast iron. But the taste is delicious. Love this recipe.

Mine turned out awesome. I do think I could’ve likely cooked them for 15 minutes as opposed to 20 minutes in the oven on 350° though. My cut was about the same as yours and I ever so slightly overcooked mine. Still great flavor.

Would smaller Chops, get less time in Oven ? Thanks..
I think a better way is to pan sear the chops on both sides. Get a nice crust on them over the coarse of about 4 min on each side, then cut the heat to low and add a 1/4 cup of hot tap water to the pan/chops and cover. Simmer that side 4 min and then flip for 4 min. Rest 2 or 3 min then pig out!

Just for the record, I think your way looked great and it obviously tasted like you expected it to, so there was no criticism on my part. The method that I described was published in the weekend edition of my local newspaper about 30 years ago and I tried it and never looked back. It just seemed a little simpler and shorter time-wise than using the oven. (also cooler in the kitchen in the summer). So I hope you understand that I was just trying to be helpful. I like the stove top first and then oven method also. My pork chops have turned out much more even cooked doing it this way.
Most important thing I've found is to temp it a few minutes before you expect to be near done to make sure it doesn't dry out.
I usually let the pork chop rest out of the oven by itself on a new plate but after watching this video, it does makes way more sense to leave it out of the oven still basting in it's own juices for a few minutes before cutting it open.

Definitely. To be honest depending on thickness you may not need to put in the oven
