What do you do when kahm yeast appears? Keep scraping off the layer when it re-appears or just at the end?
We just scrape it off once the fermentation is done. it's ok if some is left in the batch.

I have been making sauces for years, thanks to your videos! Do you ever not put vinegar in to retain more of the fermented taste? I tried it with my last batch. I'm not sure I'm sold on it, though. I typically fermenting mine for 9 or 10 months on average. I would love to know how they stack up compared to yours. I wish there were hot sauce competitions in PA. Thanks again for all the knowledge, I also love the Vitamix blender!
