Lekke. I also have a holiday house in Struis and have fished there for years. How we like to braai our Tail as it can get very dry quickly is as follow: i make a normal, lemon, butter and garlic sauce on the side. Then spice the fish with your favorite spice. Put the fillet skin at the bottom on foil on the braai grid. Baste with some sauce before putting on the fire. Then put flesh side first on the fire for flesh to seal. Then turn back (skin/foil side) now you never turn again. Now baste heavily and sprinkle a layer of fresh bread crumbs. You wil seek bread crumbs soaking in the sauce. Sprinkle over a layer grated cheese and as soon as cheese is melted everything is ready. Can cover fish with braai bak or something if braaing outside but indoor braais normally has nice heat inside to help the cooking process. Remember the secret to never turn the fish again.

Your request for a sauce / spice / marinade....for any firm fleshed fish....shad / leerie etc....marinate.....cup soya sauce, cup olive oil 2 to 3 crushed garlic, 1 to 2 Tbsp dijon mustard, crushed pepper.....put all together and pour over fish in a lockable plastic container. Turn occasionally and let it go for an hour plus. Fire...hot hot coals.....add a little salt at the end if needed. If you do it right....it almost tastes like steak.
For the yellowtail whar i like to do is as follows Once i have the fillets off the bone i will leave them in salted water for about 5 minutes thereafter dry the fillets off with a paper towel and leave the fillets in the fridge This will firm up the flesh Once completed you can use either Ina Paarmams or Robertsons fish spice with a dash of garlic salt and cracked mixed pepper corns Sprinkle fish with above mentioned spices Then take butter lemon juice fresh garlic and cracked pepper place in a bowl and microwave till melted Place spiced fish on a braai grid skin down Cook for 3 to 5 minutes so that the skin starts to crisp up Then turn fish around onto the fleshy side for the same amount of time Once the flesh side starts to get colour turn it round and start basting As yellowtail tends to get dry very quuckly make sure that you are not shy to baist the fish which will keep it moist and juicy Once the stomach starts to bubble take the fish off and leave to rest You can serve this with a fresh green salad or a baby tomatoe and red onion salad with a drizzle of olive oil lemon cracked pepper and fresh bazil
We've recently been using Spur Smoky BBQ spice on Fish and veggies on the fire, specially if it is in tin foil. It really gives that extra bit of smoky flavor.

For the yellowtail whar i like to do is as follows
Once i have the fillets off the bone i will leave them in salted water for about 5 minutes thereafter dry the fillets off with a paper towel and leave the fillets in the fridge
This will firm up the flesh

Then take butter lemon juice fresh garlic and cracked pepper place in a bowl and microwave till melted

Cook for 3 to 5 minutes so that the skin starts to crisp up
Then turn fish around onto the fleshy side for the same amount of time
Once the flesh side starts to get colour turn it round and start basting
As yellowtail tends to get dry very quuckly make sure that you are not shy to baist the fish which will keep it moist and juicy
Once the stomach starts to bubble take the fish off and leave to rest
You can serve this with a fresh green salad or a baby tomatoe and red onion salad with a drizzle of olive oil lemon cracked pepper and fresh bazil

Fishing out of Kalk Bay years ago on a commercial boat, three of us caught 980kgs of yellowtail on hand lines.
King fish in Oz, yellow tail is more know as yellow fin tuna.
