Smash burger with housemade buns!

HERE ARE THE RECIPES!
For the buns ( )( )
9oz warm water
1/4C Sugar
1/4C olive oil/avocado oil
2Tbsp active dry yeast
1 egg beaten
3.5C AP Flour
1tsp salt
Preheat oven 425F
Combine first 4 ingredients in a bowl and let sit for 10 minutes
Add in egg and then flour and salt until it comes together into a ball.
Flour a surface and knead dough for 8-10 minutes.
Divide into 8 balls and lay on tray with parchment (rise 40 minutes).
Add egg wash when risen.
Bake for 10-12 minutes and is golden brown!

SAUCE
2Tbsp mayo
1Tbsp ketchup
1 small pickled chopped and little juice

psa you don't have to season both sides of the patty once its on the heat. seasoning right at the beginning allows everything to absorb properly whereas ive found if you season after flipping, the salt doesnt absorb properly and just sits on top of the patty

Looks fantastic. About the bun… seems a little sweet. Can the sugar be reduced and/or use monk fruit?
The sugar is food for the yeast. The yeast makes the dough rise because it’s eating the sugar. You can use honey or maple syrup but if you want a nice bun, give it some sugar 😉
Partially true. Dough still rises without sugar. There's plenty of sugar and starch in the flour itself. The added sugar just kickstarts the process. @@katherinecornette5315
I use maybe half a teaspoon of sugar when I'm making bread. You don't want to taste it. It's just there to give the yeast a kickstart. DON'T use monkfruit. It won't do anything for the yeast, since it has no carbohydrates, so nothing for the yeast to consume.
Could you lower the yeast and sugar if you just make a poolish beforehand? If you are just aiming for yeasty flavor that is.
Can I use less sugar?
Yo when you're making more than one burger how do you deal with all that burnt stuff in the pan? Do you just take the pan to sink and scoop it out? Cook on top of it?
Scrape out the bits, douse it with water while hot so it loosens the stuck on bits, then wipe clean with a paper towel.

Any tips on how to keep the buns flat? There's enough room for them to spread but mine would work for a double deck burger. I use about 2 ounce dough for each bun. Should I switch to AP?
So what I do when making buns is do one big bulk ferment, then punch the dough down, cut and form the balls, then proof a second time. Flatten the balls of dough slightly after the second rise to get them wider.
