great idea, thank you. my dad used casava flour, he was from west africa. the ball you made at the start looks like ground rice (which he used to eat). I have been looking for bread that is without yeast or wheat and I've found it. normally the gf flatbread they sell tastes so bad. this looks good.

Hmm, not sure about keto friendly because I was never interested but GF definitely. I was thinking about trying different flours besides corn and rice flour. GF by force is definitely hard to adjust the taste buds! Will give this a try.
Don't work, mine gets too liquid, the cassava flour react with baking powder and become a science project, liquid when I don't touch and solid when I put my hands in. 😭😭 I wasted the ingredients, not Happy.

VERY deceptive video: this is in no way keto, as cassava flour is VERY high in carbs, so this recipe will kick you right out of ketosis. Here's a recipe for tortillas which are ACTUALLY keto (if you want more than 4, just scale it up): 3/4 cup almond flour 1/2 tsp sea salt 2 Tbsp olive or avocado oil 1/3 cup room temp water Combine flour and salt in a bowl. Add in lukewarm water and oil, kneading into a big dough ball. Divide into 2 equal balls. Divide again for a total of 4 equal sized dough balls. Place 1 ball on a sheet of parchment paper, top with another sheet of parchment, and roll out the ball into a pretty, wide, round and thin tortilla. Heat a non stick skillet over medium-high heat. Do NOT add any liquid/steam/oil/moisture/etc. You will need a dry skillet. Once nice and hot, place a tortilla on the skillet and wait for bubbles to form, about 1 minute. Flip and cook the other side for 1 minute. If you don’t have a tortilla warmer, place the tortillas on a plate and cover with another plate, or a clean and dry dish towel, stacking the tortillas under it to keep each other warm and cozy.
