I never made the video yet. I'll tell you what I did 😊. Scramble your egg and put it in the pan. When it's almost done on one side, add your tortilla and then flip it over and let it get crispy and then add your cheese.
i don't know how to use the rolling pin, i used the bottom of a pan and pressed it, and it worked out well. Thank you for this cassava tortilla, we have this in our market.

what happens if I use fresh cassava? We grow it in our yard, so I would try doing this recipe with our own harvested cassava. But you mentioned you don't have luck with fresh and buy frozen instead. is there a reason it doesn't work well with fresh cassava?
I'm thinking this would be even nicer with cassava you grow in your yard. The reason I don't like the fresh cassava here is because they are not really fresh. They've been in the store a long time. When you cut one open, they usually have black specks and lines, or they are discolored.

You could probably get the fresh ones in Florida. It tastes similar to potato Debbie.
