Also after caramelizing onions ,bell pepper celery garlic you brown the meat take that out of the pot and in the same pot with the fond in the bottom of the pot brown the long grain rice for a little .Dump everything back in add the liquid and let it cook till rice is tender and liquid absorbed. I'm going to try your stew .It does sound good
i like to brown the sausage in the oven for 10 minutes at 375 degrees before putting it in the slow cooker. alsp parboiled rice is the best type of rice for JAMBALAYA.
You got the right idea, but the execution is off. You always cook the rice with your ingredients. What you made was a soup from Jambalaya ingredients. Jambalaya is the rice and everything combined. And the tails have got to come off the shrimp prior to cooking them. And you can use smoked, or andouille (An-dew-ee) sausage.
Where are you from? Jambalaya has the rice cooked in with everything else . Are you from the north I'm from Louisiana .Seventy plus and have never seen or heard of it not having the rice cooked in the same pot with everything else .Your recipe sounds more like a stew of some sort and is probably good but don't call it jambalaya
More like a SOUP.....Jambalaya is not a gravy type mix..It's more of a dry/moist mix with Rice in it..I'm from the south in my 70s and have made jambalaya since I was a teenager - learned from my parents and grandparents.

The sausage is pronounced Ahn-dewey. Also I never had it over rice as Jambalaya is rice with all the other things.
The amounts are never mentioned here or at website except for 1 TBS of tomato paste.
