In this video I show you how to prepare a fried seafood platter, just as it is done up and down the southern states along the Gulf of Mexico! Growing up, my family would occasionally go to some of the best restaurants on the Biloxi beach here in Mississippi, and I would always order the seafood platter, because it had some of everything, and I loved it all, as so many people do. Enjoy the video, and have a little taste of the way its down on the Coast!

French Fries:
Ingredients:
6 russet potatoes
4 tablespoons of white sugar
2 tablespoons of light corn syrup
Salt to taste
Directions:
Cut potatoes into fries, and let soak in cold water for 10 minutes and rinse. This will remove much of the starch. Now heat enough water to cover fries, to a boil. Turn off heat, and stir in sugar and corn syrup until dissolved. Now let fries soak in this mixture for 10 minutes. Drain water well, and deep fry for 2 minutes. Drain fries on paper towels, and place on a rack, and place into the freezer for 20 - 30 minutes. Now remove fries and deep fry until golden brown at 350 degrees F
Hush Puppies
Ingredients:
1 box of Jiffy corn muffin mix
2 eggs
¼ cup of all purpose flour
1 teaspoon of garlic powder
1 teaspoon of onion powder
¼ teaspoon of sea salt
¼ teaspoon of cayenne pepper
About 3 tablepoons of chopped green onions
Directions:
Mix all ingredients, but don't over mix. Heat oil up to 350 degrees F, and take a couple of spoons and spoon a small amount into the hot oil. Repeat until all the batter is used. Cook until golden brown, and flip as needed
Fried Fish
Ingredients:
Seasoned corn flour
Oil for frying (350 degrees F)
Directions:
I used Zatarains fish fry in this cook, and I have always used it. Coat your fish fillets with a light dusting of the corn flour, and then fry until golden brown. The fish will normally float when done.
Fried Shrimp & Scallops
For the Shrimp & Scallops, I used a combination of milk and buttermilk (50/50) and seasoned the milk with a cajun seasoning. I always use Essence of Emeril on fried seafood. Great flavor! A place all the shrimp into the milk mixture, and then one at a time, I will coat with a seasoned self rising flour (also seasoned with Essence of Emeril) then deep fry at 350 degrees F until golden brown. Note: All seafood taste even better, if you use cottonseed oil! Plus it will hold up to the heat better than most oils, and it has no flavor of it's own, to impart into the seafood, like vegetable oil will do.
Fried Oysters
Ingredients
Oysters
1 egg
½ cup of beer
Seasoned self rising flour
Directions:
Mix the 1 egg with the beer, and now dip each oyster into this egg beer mixture, and then lightly coat with the seasoned self rising flour, and fry until golden brown at 350 degrees F. Drain on paper towels and enjoy!
Crab Cakes
Ingredients:
1 pound picked crab meat
1 chopped onion
3 stalks of celery
1 clove garlic, finely chopped
3 springs thyme
3 springs parsley
1/4 teaspoon of red pepper flakes
1 cup of bread crumbs soaked in milk
Butter
Directions:
Heat a saute pan with a tablespoon of butter added and when hot, add the vegetables, chopped fine, and the seasonings. Saute for 10 minutes, the remove and let cool.
Add the crab meat and the bread crumbs (squeeze to remove most of the milk) mixing gently so as not to break up the crab meat to much. Form into cakes and deep fry until golden brown. Note, they may take on a darker color than most seafood. Darker than golden brown.

Thanks Greg! I actually bought this fryer around 4 months ago, and been waiting on cooler weather to finally get here before using it. Not something I will use all the time, but perfect for family and friend gatherings. I was pretty impressed with it. We love to catch Speckled Trout in the cold months, starting around this time of year. They move into the bayous, and we catch them on artificial bait, or live shrimp, fishing about 18" deep with a popping cork. Lots of fun!

I love seafood, but I also love it boiled in Cajun seasonings, and I eat that way more than this, even though this is probably my all time favorite ways to eat it. Does that makes since, lol! Thanks so much! I really appreciate it! First time to use this deep fryer, and I'm really liking it! I will only use it on big family cooks like this one. It holds 4 gallons of oil, and not really cost effective for smaller cooks. I wish I would have had this a few years ago, when we had our family reunion! I fried 50 pounds of shrimp on a electric home style deep fryer, lol

It is a Bayou Classic deep fryer, and I placed the fried food on paper towels to drain, and then onto a cooling rack, which I placed in the oven to keep warm until all the food was ready. I kept the oven at 170 degrees F, which kept the food warm, without drying anything out. Everything that I cooked fries fast, so nothing had to stay in the oven very long. Turned out really good. I've also done some shrimping in my time as well, so to me it's not really work, just something I have always done, and enjoy. I really liked the way my new fryer performed. I was in Virginia a few years ago with my job. I was there for 8 months, and ate at a few of the local seafood restaurants there, and was well pleased with east coast seafood! I really liked the steamed shrimp, with the Old Bay seasoning, and their fried seafood was very good as well. I didn't realize you were from the south! Yeah man, hush puppies have been in my life for as long as I can remember! I can still see my mom cooking them up in a cast iron skillet on the stove :)

Lol Randy! You have a great way with words my friend! I use that Jiffy box for one thing only, and you seen it, lol! My 3rd wife, ummm, wait a minute, was it my 3rd or 2nd? Oh, it was my 2nd wife. She made the best hushpuppies that I have ever eaten, and she did them with the Jiffy, and she would never give me her recipe! This is not her recipe, but close. I will eventually figure out just how she did hers, lol! I've eaten Zatarain's fish fry all my life. Good Stuff! Thanks Randy! :)

Sorry I am one of the Skinned people but I do realise that when cooked in a deep fat frier the skin holds the fish together so I tend to shallow fry in a frying pan. I also tend to use Paprika rather than Cayenne Pepper as the later just adds heat where as the Paprika adds flavour as well. Looks good enough to eat. Andy C

Thanks Gary! Yes it's all stainless steel. Just Google Bayou Classic 700-701 Bayou Fryer, and you can read all about it. Tastemade doesn't have any rules about product reviews. I was trying to squeeze all the footage in that I could, and still keep the video from being to drawn out. I actually bought this fryer about 4 months ago, and used it for the first time on this cook. I bought it right from Bayou Classic, since they are only 3 hours away. It only took 2 days to get here.
I kind of went over how it works in the video, but the unit is made by Bayou Classic. This model is the 700-701 four gallon bayou fryer made of all stainless steel. There is a lot more information online, on their website.

Each to his own. Do it how ever you please. Don't make a bit of difference to me, but just don't tell me how to cook or eat! You must have missed my most recent video! Cajun Seafood Boil! I don't fry everything. This is a BBQ channel, that happens to cross over into other ways of preparing food. I often wonder why people that are so set against something, spend their time even watching. Strange!

For scaling fish, you lay them in the grass. Then, working against the scales, you use the garden hose, with a nozzle. This does a quick, clean job of it.
Rus you just confirmed why I drooled at your pics in Facebook! OMG man that looks fantastic. I've always wanted to try hush puppies and I'm going to make them for sure. Absolutely fantastic meal. Now I'll take 2 orders and I want some sriracha mayo dip with it LOL :)

I live in New Hampshire Rus so there is no difference between what you would have eaten in Vermont. My Mom is from Georgia (I was Born in Texas) so I'm familiar with Hush Puppies, and miss them too. Because of my southern roots I'm very interested in your cooking especially.
