    One Pot Chinese Spicy Seafood Platter 香辣海鲜拼盘 Asian Crab Boil w/ Shrimp Clams
    Ingredients:
    Serves 4 pax
    -------
    1 thumb-sized sliced young ginger
    3 spring onion stems (cut into halves)
    4 cloves chopped garlic
    10 dried chilli (rehydrated and deseeded)
    1.5 tablespoons Szechuan peppercorns
    2 tablespoons spicy broad bean paste
    1L water
    1 tablespoon oyster sauce
    1 carrot (cut into chunks)
    3 potatoes (cut into chunks)
    1 corn (cut into smaller pieces)
    800g crab
    360g prawns / shrimp
    450g mussels
    450g clams
    Some cornstarch solution
    Garnish with spring onion leaves
    If you're using fresh mussels or clams, you just need to cook them for 3 mins. Feel free to add more of the seafood and root ingredients.

    I ate this kind of dish many times, but I never understand why the Corn ia considered "essential" in a seafood platter... can anyone elaborate?

      It's a tradition from the American South. Specifically from South Carolina Gullah foods. It's a one pot wonder with sausage, corn, potatoes and fresh seafood. He used some nasty little crabs that were probably not legal to catch. And nobody would eat them. Mud crabs, or undersized Velvet Swimmers. Whoever caught and kept those crabs should have been fined. Damned shame that some rando on UA-cam is actually cooking this shit. It's not legal. They are undersized.

      @@AnonYmousxxx69420xxx not legal? why? it's not like those crabs are poisonous... I mean, in South East Asia (or even other countries that is not US), mudcrabs are very common, and the size doesn't really matter as long as it is alive & fresh.
      Not everyone in every country eat something with ridiculous standard such as the US... I mean they even reject a non-symmetrical Bellpepper for whatever reason, while other countries have food shortage.

      In the history of Louisiana, french colons were eating primarily corn, bought from local native american tribes, in every meal. They said indian maize was better than canadian french maize. Corn soup, corn paste, corn stew, corn bread, corn pudding...Corn everywhere! It's a kind of cajun traditionnal food.
