- Top Chef alum and Food & Wine Executive Producer Kwame Onwuachi traces his culinary roots by traveling to Trinidad, Jamaica, Louisiana, and Texas in this three-part series. In this episode of "Tasting Home," Kwame reunites with his Grandfather (Papa Winston) as they embark on a journey to Trinidad, the land of doubles, geera pork, and fried shark.
"We arrived in Port of Spain and stepped directly into history. Trinidad and its twin island state, Tobago, have been deeply imprinted by centuries of colonialism and bloodshed from British, French, and Spanish occupation; the importation of Indian labor and African slaves; and the exploitation of indigenous Carib and Taino cultures. The less-terrible legacy of all of this is that the culture has been blitzed into an astonishing and vibrant mix. You can trace a straight line from the fluffy plates of cou-cou, a polenta made of cornmeal and okra, back to African slaves who arrived in the 18th century. There are French riffs on dishes that are chopped and screwed through the patois and come out a thousand times better and spicier, like buljol, a salt cod, pepper, and tomato salad. Thanks to the large Indian population, spicy pholourie, an evolution of pakora, and golden fried mashed potato pockets called aloo pie are hawked on every street corner. Cumin, a staple in the Indian pantry, is here called geera and used in my favorite Trini dish ever: chunks of spicy-as-hell geera pork."

I am from Trinidad and I give you 100% for your showcasing of our food. Really accurate presentation of the balance between Local creole and Indian food which the majority of Trinis enjoy daily. We do have lots of Chinese, Arab places etc but in terms of representing the majority of the ethnic foods , you did an excellent job.

As a broke form 6 students, Hotte Shop always used to be our saviour at lunch times, selling “Skin and Sauce” for TTD $5.50. It was dhalpourie with any curry sauce of our choice. You were lucky to get a single shrimp or small pieces of chicken when you ordered.
Can't believe it's been 25 years since I was on this beautiful Island of Trinidad. I still remember the Roti and Bake and Shark and Maracas Bay. Man, I could life of that, have to come back one day :)

I was in Trinidad and Tobago 12 years ago and this makes me miss it. Some of the places are still recognizable. Especially, Richard’s bake & shark
To me, Trinidad was Royal Castle Chicken, Roti, Bake n Cheese. I grew up in Trinidad, I went to school in St. James Woodbrook. And then Bishop's. I still have family in Trinidad, and my heart belongs to Trini. 🥰😘

Born in Trinidad, raised in Brooklyn and this video made me so happy. I challenge you to find finer Caribbean food than in Trinidad. Our roti, doubles and bake and shark alone.....world class. Would have loved to see him try some Trini Chinese food. Chef Kwame kudos to you for celebrating and sharing the culture.
Why do people say things like that? Of course Trinidad has the best food and I am from another beautiful Caribbean island. No need to start a competition and stay challenge, we all acknowledge that.

I love that most of your stops was not the typical popular places except Sauce doubles, Hot Shoppe and Richards Bake and Shark which in my opinion is the most overrated of all. Thank you for taking me on your video journey to Trinidad. I was born, and raised in Port of Spain. I am a few years younger than your grandfather. I left Trinidad at the age of nineteen. When I lived there, I went to school or to the beach. I know very little of the Trinidad countryside or Tobago. I look at these videos of Trinidad and Tobago, and am learning about the islands. I am amazed at the sights and the foods. I remember Carnival and steelband. I worked in the bank in St James for a few months after school graduation, and my school friend lived in St James. I wish your grandparents good health. I am Chinese, btw.

Love this video. Happy I stumbled onto it. I saw kwame on his top chef season and recently found out he had trinidadian roots from his guest judging on the top chef All stars season. I'm happy that he allowed hid grandfather for re experience his roots again. Hopefully the t&t cuisine help inspire and motivate his food/life.

I enjoyed this vlog especially your visit to Tobago with your granddad and the family reunion in D'Vale where i grew up. It is really a blessing to be able to socialize and communicate with the elders in one's family. They give you the gift of having "Roots" like no other. The roti stops were a hit with me as well but NOOOOoooo SAH!!! Hot Shoppe is NOT what it used to be, which was GOOD...once upon a time. 🤔

Honestly speaking, Trinbagonian food is chock full of flavour. As a Trinbagonian, a friend of mine from England once told me that if I were to ever visit there, I would have to cook my own meals because English food would register as wet cardboard in my mouth because of the medley of flavours we incorporate into our dishes. I would still like to try foreign foods though. Most of them, that is.

Chef Kwame traveled to Trinidad with his "Grand Father" visiting all his relative, eating local foods and having a good time. Confessed to the Trini people that he is Trinidadian and Nigerian they loved him. Now that he is Big time, he goes on Sherri Shepard Day time show and says he is Jamaican and Nigerian.
