- Here's my recipe for the ultimate salty-sweet dessert turbo-charger: Salted Caramel! All you need is sugar, water, vanilla, cream, sea salt and a little know-how and within ten minutes you could have a seriously delicious salted caramel situation on your hands. It's perfect for jazzing up ice cream, pouring over store-bought desserts and much, much more, and if you have time to whip up a batch this week be sure to tune in next week for an amazing cupcake recipe using Salted Caramel!

I made two batches of this for cupcakes for my daughter's bday. One batch was definitely enough. What lovely Ms Jemma DOES NOT TELL YOU is how to stop eating this stuff! I will admit to standing in front of the fridge eating it straight from the jar. Seriously, someone come take this jar from me.
This recipe works so well! I used 200g granulated sugar
240ml double cream
6tbsp water
1tsp vanilla extract.
The sugar caramelised very quickly. Took me about 10 minutes to make it.
Is this the recipe converted into grams?

The jar with caramel dripping in the thumbnail looks really good, but boy will that be tough to clean 😂😂
Not really. You just soak it in water for a while

OMG! Best Salted Caramel Ever!!!
So I had little troubleshooting... the second I started pouring the cream into the sugar mixture it became one giant blob that wouldn’t dissolve. So I brought it back to the stove and started mixing on low medium heat and it eventually dissolved and shockingly it became a nice, smooth caramel sauce . Tastes delicious.
Good work! When it blobs up it means it has seized. Put it back on the heat on low. I always put a splash of water too but bare in mind it won't set the same if you put water (but it's great for beginners). Happy baking :)
Because you’re cream was to cold it has to be hot or warm and that also goes to butter bc hot sugar doesn’t mix good with cold things

Oh my goodness Jemma I just made the sauce and it's absolutely amazing! What I got was a bit thinner but probably because I used thinner cream (I'm not so sure what to get for actual heavy cream here so I used what I found) but it tastes absolutely heavenly! Thank you so much for the recipe!

Sugary stuff generally takes a long time to go bad because sugars don't break down from standard bacteria. The only thing in this recipe that could go bad would be the cream, but as it's being diluted heavily by the sugar in the caramel it should be fine for at the very least a month.
So I use this recipe to make salted Carmel ice cream and it’s incredible! Just a few notes... she doesn’t mention to warm the cream ahead of time which is a must not to harden your Carmel also I feel a teaspoon is way too mild so if you like yours a little more salty I usually add 2 and an extra for my ice cream specifically. Also she mentions I think in another video how long it keeps in the fridge, in my opinion it keeps way longer than a couple of weeks and I leave it on the counter.

I’d say maximum 2 hours for any dairy but for this, you can leave it out for about an hour or what I did is just heat it up until it’s body temp :)

When I add my cream (even in a steady stream ) it still tends to seize the sugar- resulting in a big lump situation. What can u suggest?

I use my cream at room temp instead of straight from the fridge, which helps 😘
Make sure to star continously as you add all your cream.
This might be late but for anyone's reading, when this happens don't panic keep stirring the as the cream heat up the sugar will dissolve again and incorporate
jemma , is it possible to use whipping cream ?
Any kind of cream should work as long as it's liquid (not fluffy or whipped up). The liquid whipping cream would be fine :)

Pop it in the fridge in a sealed jar. It will last 2-3 weeks.

I've just wasted three cups of sugar trying to make this. What am I doing wrong? I'm following your exact directions: do not stir, use castor sugar, medium heat. In my three attempts, the sugar does not brown and crystallizes. Can you help? Any tips? I've followed your instructions exactly and have wasted almost all of my sugar :(
Rebecca Wilson Yup, sometime that happens to me as well. It could be happening for a number of reasons but here are my tips. Don't stir as this will cause the sugar grains to get stuck up the sides of the pan meaning that when the rest of the sugar dissolves and gets to the right heat, these 'cold' grains are reintroduced and changes the temperature causing crystallisation. Start off on quite a low heat and once the sugar grains are barely visible turn it up a little bit to caramelise. If it does crystallise you can actually save it by simply seeing it through. Keep it going over a low/med heat and it will eventually 're-melt' and caramelise. It's really weird. I have found this out the hard way and wasted lots of sugar in the process as well! Good luck! x
Are you using a dark coated pot or a stainless steel pot? I tried making this tonight and my first two attempts failed (it took about 45 minutes for the sugar to finally start browning and as soon as it did, it crystallized) When I switched to a stainless steel pot, it cooked exactly how Jemma's did! If the switch in pots worked for me maybe it will work for you! Good luck!

You may have found a solution already, but the exact same thing happened to me, I had to re-make the caramel 3 times. The reason I found out was because something (either my saucepan,whisk or measuring cup) was not properly cleaned, so I washed everything extremely well and restarted the process and it worked. Any sort of contamination will cause the sugar to crystallize
I think you can add some corn syrup to help avoid crystallisation. In case you want to now the science behind, here's an explanation as to why it works:
"Corn syrup is an invert sugar, which means that it prevents sugar crystals from forming. Microscopically, sugar has jagged edges and when you melt it, sugar liquefies. But if you keep cooking it to a syrup, those jagged edged-fellas want to re-attach themselves to others. Corn syrup acts as interfering agent, which ‘interfere’ with that process. Honey, agave, and the like, don’t have the same properties.
If making a caramel, and a recipe calls for corn syrup, you can substitute a dash of lemon juice or cream of tartar, which performs nearly the same function."
