I’m Indonesian…and I must say Uncle Roger knows the real Indonesian ingredients by name such as; kecap manis, egg noodles, and IndoMie which it impresses me. Also, its common to use MSG (vetsin)and shrimp paste (terasi) to get that authentic taste. Lastly, Indonesian are predominantly Muslim so adding bacon (pork) into mie goreng is highly unlikely to be served on the street corner. Uncle Roger is right on the money there!!! Crazy to think Gordon Ramsay watched his videos and found humor in it. I know he's nothing like the Hell's Kitchen show, he's actually really chill but I didn't take him for a person with a sense of humor and self awareness. I absolutely love it.

I'm an Indonesian and a big fan off Indonesian fried noodles (mi goreng). I must say, Uncle Roger was right about the noodles. It has to be egg noodles, but sometimes you can do rice noodles as well. And Gordon missed shallot. Indonesian rice/fried noodles always have shallot in it, mixed together with garlic, cut of chilli, and also MSG. I feel good also Gordon use a sweet soy sauce because that's an important thing on this dishes. Can't wait to be on your tour and I've reserved my ticket on your show in Houston!

I am Japanese and when local chefs do European cuisine, it’s all about making it as authentic as possible. Only the authentic ones get respect.
When western chefs do Asian food, it’s amazing how much they vandalize it.
@user-du6re4ks7h alot of that has to do with how hard it can be to source some things in the west. For example, when I want mirin, I have to drive over an hour one way to get it.
I don't think there's anything wrong per se with adapting a dish for your culture: if for no other reason than that some ingredients might be next to impossible to find, so you might end up having to improvise. The problem is when people try to sell it as "authentic", when it clearly isn't.

Not true. People localise food everywhere. I don't get the hate against this. It's only questionable if they call it "authentic", but if they don't pretend like it is, localisation is perfectly fine and even a good thing. What may be ideal in one region may not be the same in another due to differences in ingredient availability and personal taste.

Just wondering if Indomie is the most popular brand in Indonesia? I'm Malaysian, have only tried Indomie and Sedaap brand, but from what I can see most Malaysian prefer Sedaap brand. Indomie brand is too salty in my opinion. What's your opinion on these two brands? Sorry I don't mean to be offensive on what you guys proud of. Just wondering is Indomie brand in Malaysia and Indonesia has different taste.

Basically, pigs are dirty because they rolled in mud to cool off from the hot desert sun. Dirty things back then were *dangerous*, they carried more germs and bacteria therefore making it harder to prepare without getting sick. Pigs also spread a lot of diseases. Not to mention meat spoiled easier back then, especially since it was a desert. So small things like chickens and goats which can easily be eaten down by a village was more sustainable and easier to eat up than a massive pig. Also there could be other religious reasons, like pork tasting almost identical to human meat. Cannibalism is prohibited in Islam.
Islam is also a religion that emphasis’s on cleanliness. Cats clean themselves, which is why a lot of Muslims own cats and view them as very hygienic. Dogs don’t clean themselves and would poop anywhere they like, which is why dogs are viewed as unhygienic and not really owned as pets unless they were super important (guarding, sheparding, hunting, etc). So *eating* dirty animals was completely out of the question.
And for the boar part, that depends on the school of thought.
In the end, it’s just something we’re taught by Allah and the Quran. We do it because we trust His judgment for us.

Simple Mee Goreng recipe (Malaysian way):
Ingredients:
· A packet of egg noodle
·Chicken fillet (put as many you want)
·3 shallots (sliced)
·2 garlic cloves (sliced)
·3 tablespoons of ground chilli
·4 tablespoons of chilli sauce
·5 tablespoons of soy sauce
·2 tablespoons of oyster sauce
·1 cup of water
·2 eggs (beated)
·1 piece of tofu covered with a little turmeric powder & fried
·1 tomato
·1 chives (cut into 1)
How to cook:
1-Saute shallot & garlic until wilted. Then, add the dried chilli blend. Stir until chilli is cooked & bursts into oil.
2-Mix the chicken. Stir again until the chicken is half cooked.
3-Add chili sauce, soy sauce & oyster sauce.
4-Add water & salt. Stir until boiling then mix the noodles, stir well.
5-Pour the eggs. Let it be for a moment, then stir.
6-After mixing, mix the tofu that has been fried and cutted into small pieces, tomatoes and chives. Stir well & serve.
