Garlic & Herb Grilled Lamb Chops 🐑🧄🌿 If you never had lamb chops, you're missing out.. They are absolutely phenomenal, especially when grilled and dunked in a delicious yogurt sauce. Don't let me forget to mention that they're easy to make. Definitely a protein I wanna get in my rotation more often! FULL RECIPE ⬇️ INGREDIENTS - 1 frenched rack of lamb - ~1/4 cup extra virgin olive oil - ~6 tbsp of fresh minced garlic - 1 medium shallet grated - ~4 tbsp fresh chopped rosemary - ~4 tbsp fresh chopped thyme - ~2 tbsp onion powder - Salt & pepper to taste - Juice of 1/2 lemon - Garnishes: chopped parsley, cracked pepper & flakey salt. Lemon Garlic Dill Yogurt Sauce (Combine all ingredients) - ~1 cup fat free plain greek yogurt - ~1/4 cup fresh chopped dill - ~1-2 tbsp fresh minced garlic - ~1 tbsp lemon zest - ~2 tbsp lemon juice - smoked paprika to taste - salt to taste - pepper to taste - ~4 tbsp xtra virgin olive oil Note: Measurements are estimated. Taste and adjust ingredients to your liking. DIRECTIONS 1. Trim the fat off of the rack of lamb to your liking then cut it into individual chops and add them to a large bowl. 2. Next add in the olive oil, minced garlic, grated shallot, rosemary, thyme, salt, pepper and lemon juice. Mix till well combined. 3. Next prep the lemon garlic dill yogurt sauce and place it in the fridge until it's time to eat. 4. Set the grill up for high heat 2 zone cooking. Sear the lamb chops for 2-3 min per side flipping frequently to prevent them from burning. Then move them to the indirect side with lid shut to finish until they reach your desired internal temp. I pulled mine around 3-4 minutes resulting in a nice medium finish. (~140 degrees internal) 5. Growing up in the 70s 80s in Australia we used to have lamb chops at least once a week. Roast lamb on Sundays. Lamb was cheaper than chicken back then… Since the world discovered Australian lamb it is 4-5 times the price (including for inflation). Now it’s a once a month luxury ! Edit: try horseradish in your yoghurt sauce. Adds a nice element of heat that goes well with lamb
Grew up early 2000 here, man I wish our government wasn’t so shit. It’s a struggle in this hell hole of a country, we have no freedom and not just that our inflation rates are threw the bloody roof while our pays and money stays the same. All I want is to be able to open carry in all honesty lol, it’s hard enough getting a registered firearm here & then you can’t even open carry unless you’re hunting but then it may just be the states laws in mine as I know some states have different laws & such! Anyway i have no clue why I brought all this up 😂 I want some fucking lamb now 😂 but the best lamb to buy is definitely fresh from the butchers! Or just buy one and do all the work yourself! Which I do once in a blue moon if I’m honest.

INGREDIENTS
- 1 frenched rack of lamb
- ~1/4 cup extra virgin olive oil
