Great video and thanks for sharing. Lamb is indeed one of my favorite meats and grilling is the way to go. That said, I would mention one thing, and that is to let the chops sit for about 5-6 minutes before cutting into them. The heat will rise a bit and the pressure on the juices will be slowly released allowing the juices to redistribute towards the edges of the meat locking in all that yummy grilled flavor.

I think it's important to season the lamb well and then you won't even notice the gamey flavor. You don't even taste it in this recipe! :) I do not recommend soaking in vinegar as that can make the meat tough.

The acid in the wine and vinegar may make the meat more tough if it stands overnight. I recommend a maximum of 2 to 3 hours. You can marinate with the garlic and herbs overnight and just pour the red wine and vinegar right before grilling.
