    Great video and thanks for sharing. Lamb is indeed one of my favorite meats and grilling is the way to go. That said, I would mention one thing, and that is to let the chops sit for about 5-6 minutes before cutting into them. The heat will rise a bit and the pressure on the juices will be slowly released allowing the juices to redistribute towards the edges of the meat locking in all that yummy grilled flavor.

      @@TatyanasEverydayFood Thank you. Right now I'm letting it marinate for flavor. It's ice cold in NY so no outdoor grilling but I'm sure it'll be great over the stovetop as well.

    I just use olive oil, salt and pepper, thyme, garlic, rosemary, and just a touch of sage. You can add a little red wine or balsamic vinegar or both. This is really good with couscous and tzatziki.

    Tatyana how do you take the game taste out of the meat? I'm the only one in my house who likes to eat lamb chops. Would you recommend soaking the meat in Apple Cider Vinegar for a few hours?

      I think it's important to season the lamb well and then you won't even notice the gamey flavor. You don't even taste it in this recipe! :) I do not recommend soaking in vinegar as that can make the meat tough.

    Question: could I marinade the meat overnight or would that ruin the dish?

      The acid in the wine and vinegar may make the meat more tough if it stands overnight. I recommend a maximum of 2 to 3 hours. You can marinate with the garlic and herbs overnight and just pour the red wine and vinegar right before grilling.

I am learning much just by reading your replies! One thought: while your nails are truly lovely, clear polish would better convey “clean” when handling uncooked food.       I would recommend using a frying pan if you don't have an oven. Preheat it over a medium-high heat with a little bit of oil. Sear the lamb chops about 3 to 4 minutes per side until well browned. You can finish them in the oven under the broiler :)

      Yes, I do not recommend over-cooking the lamb to full doneness. It will be too dry.

      Not raw, cooked to the proper temperature. Meat should be cooked by temperature, not color.
