That’s an interesting take on a Beef Wellington with chestnuts in the mushroom duxelles. I think I would tie the narrow end of the tenderloin while searing it. A Demi glacé would be nice to finish it.

Maronen zu den Pilzen, wäre ich nicht drauf gekommen. Klingt aber nach einer sehr leckeren Idee, muss ich mal ausprobieren. Aber bitte, das Fleisch ist so unterschiedlich dick. Das Ende/ der Zipfel war vermutlich schon beim Anbraten durch. Und vor dem Anschneiden hätte man es gut auch noch 10-15 Minuten ruhen lassen können ;)
