Ingredients for 10 minute cheese sandwich
Prep Time - 10 mins
Cooking Time - Nil
Filling Serves: 2
(Tsp-Teaspoon; Tbsp-Tablespoon; Cup - 250 ml)
Ingredients:
1/4 zucchini (50 gms)
1/4 red capsicum (30 gms)
1/4 green capsicum (30 gms)
1 carrot (30 gms)
1 tbsp coriander leaves
1 tbsp spring onion, chopped
1 tsp dried rosemary
1/4 tsp black pepper powder
1/4 tsp sea salt
1 garlic clove, grated
3 tbsp cream cheese (40 gms)

Note: This filling is 2 servings; leftover can be refrigerated.
For the sandwich: For One Serving:
2 slices of sourdough bread
half portion of the filling.
Method:
Roughly chop the vegetables and add into a min chopper. Add the coriander leaves and spring onion.
Pulse a couple of times to get finely chopped vegetables. Alternatively you can also chop the vegetables finely with a knife.
Into a bowl add the cream cheese, minced vegetables, rosemary, salt, black pepper, grated garlic.
Mix well. The cream cheese filling is ready.
