My mom is Vietnamese (step) and she always boiled an entire chicken and made me strip the chicken and used that for the primary meat! Super healthy and is a great way to get a balance of protein and carbs!

I used rice instead of vermiccelli and I used Cabbage instead of Lettuce, Broccoli sprouts instead of bean sprouts, Sweet Potato instead of Tofu, and Avocado instead of shrimp.

Instead of using hoisin, try using plum sauce! U can find plum sauce in the asian corner of almost any market and you don't have to add the sweet water:) plum sauce and peanut butter is my absolute favorite sauce with spring rolls Give it a try it is AMAZING;)
I'm going to make this. I'm half Honduran and the sawed tooth coriander is known as culantro, or cilantro ancho in Spanish. I always shop at Vietnamese stores stores for this herb, because on the West Coast, Latin American grocery stores (typically Mexican) are unfamiliar with it. I was so happy to find out that Vietnamese people, eat this herb too.

Please no!, do not put more water on wood cutting board. Too much water will make the rice paper soggy and easy to break. Lay the round rice paper on your round dinner plate and roll it there. It's a perfect size for the round rice paper.
and sticking to the board won't make it easy to break? I get it, if you've over soaked your paper first but I've never had an issue spraying my board and a spray on top of my paper. It comes out flexible and not soggy.

Thanks for the rice paper instructions. I made a spring roll this morning and the wrapping was difficult. I was wrapping on a paper towel which was a nightmare. A wooden cutting board would be much better. Thanks again. I don't want to be intimidated by spring rolls again.

Question, I know when you refrigerate cooked rice it hardens. I know the wrapper is made with rice too but is there anyway that I can keep it fresh to serve the next day?

Hey sav! Omg you should really try the spring rolls with tuna and shredded chicken mixed together! I promise you it's heaven in your mouth! My mom tried making it once because we didn't have any other meats, please try it and let me know if you like it!
+msladykaay Ha! I know what you mean, I was desperate one day and didn't have anything but canned tuna and canned salmon as meat and it was AMAZING in my roll! Chicken is what my kids want as they do not like pork or shrimp! I really love these rolls, so versatile, so many veggie options to use as well. Another really great way to eat is fully veggie and instead of where you place the meat, you place either roasted or steamed squash. SO GOOD, give that a go and see how you like it as well!

Oh when you took the wrapper out the water it was still firm but it softens while adding ingredients to spring roll! Wow I always soaked my wrapper tell its not firm and was soft & it was hard to wrap. Lol

Looks great ! I have found that the rice paper sticks to my wood cutting board , but doesn't stick to a uhmw (plastic) type cutting board.
+AK FISH spray your board with water first, this helps with not absorbing the moistness from your rice paper and assemble and roll FAST! ;-)
