This is a very old tried and good casserole. I think this is in almost every church cookbook. I put sharp cheddar cheese in mine. It's as good as a dessert!
I took this dish to a church potluck and it was received favorably, in spite of my goof! After baking for 15 minutes I realized I forgot the sour cream😢! My husband said take it out and stir in the sour cream anyway. It worked and tasted just as good😄!

I never liked creamed corn but I had this casserole for Christmas Eve last year and my sons in-laws. It was so delicious I asked to bring leftovers home. I don't know if they had the added sugar. Regardless, I have been wanting to make it. Yummy! And Jiffy is a must-have!
I love corn casserole we had a country cook who was the head cook in our hospital cafeteria and he would make this in huge pans for meals in our cafeteria and it was so delicious and every pan would sell out before shifts end every time he made it , he would make it for both day and night shifts meals which I always thought was so kind if him because the night shift sometimes felt like we got left overs or not as nice of meals as day shifts did ! Yummy. This is a holliday special in my family since 1982. I got this recipe from my mother-in-law. The kids and men always ask for it. Basicly the same ingredients minus the onions and sugar. We love it. I always scrap out / off everything too.

I make my own creamed corn. Cut off the Cobb run a knife and scrape the juice out of the Cobb cook with butter or bacon grease, small amount of water cook slowly, for about 2 hours until creamy.
You just reminded me that my mother used to make hers like this. I would help shuck the corn & she cooked enough to freeze for the winter. It was delicious!

I make this recipe all the time. I use the same ingredients but add more ingredients to my recipe. I add onion, green, red, yellow bell peppers, pickle jalapeños peppers, and garlic powder, or you may sub the jalapeños for red pepper flakes. The additional ingredients really create a fantastic dish. I also add 1/4 to 1/2 cup of milk for additional moisture. One additional tip is to stir your dish during the cooking process after it has cooked for about 15 to 20 minutes. This ensures the middle is cooking evenly as the sides. It's all about taste to your liking.
We just made this for the first time. DELICIOUS!!! For my husband and I we will probably get 2 meals each out of it! Lol. I plan on giving it the church potluck test in a couple of weeks. I'm sure I'll be bringing home an empty dish! THANK YOU, BOTH.

I grew up on this and I make it for all family gatherings and holidays, my recipe also calls for sharp cheddar cheese, I add it occasionally, but I never add sugar because the corn is sweet, I’ll try adding in some onion next time because I’ve never done that!
My grandmother made this only instead of onions she used finely diced pimentos and green pepper. Not much but just to give it some color for Christmas. So good!
This makes me miss my Grandmother's cooking. She would cook Silver Queen corn and take it off the cob and scrape the cob until the milk comes out of it and added other ingredients to make cream style corn from scratch and I promise you her dumplings were the best. They were so light, fluffy and tender and cooked with enough butter to clog your arteries

I have made this for years. I have never added sugar or onion but I have used southwestern corn or mexicorn in place of the regular corn. It has peppers and I think some onion in the corn which adds flavor. This is a great side dish and our family especially likes it at our Thanksgiving table. Thanks for sharing!

I have made this so ,so man years I don't put onion but I put cheese like about /2 cup in the mix and right before it finish cooking I sprinkle another 1/ 2 cup on top just till it melts I appreciate your recipes I am a deep raised either lady from grandma to mom this is a casserole a corn pudding don't, Don have jiffy it have butter,sugar,eggs,vanilla but cream corn and whole kernel corn and not drained both r so,so good just my two cents but true
I make something like this but call it corn pudding. I double it and put in a 9x13 greased pan. I use an 8 oz softened cream cheese instead of sour cream. Fabulous!

Love this creamy corn casserole , always made it at my home back in the states, now we've moved from the U.S. and have been unable to find Jiffy mix.we never used onions or sugar, we did use cream cheese instead of sourcream. Yours looks delicious.thanks for sharing, and bringing back memories.
I have made this recipe before minus the onion. I just prepared a pan of this, and it's in my oven now (with the addition of the onion), and I am looking forward to having a bite, especially since I am hungry. I think you don't need to eat this with anything and that just eating it alone is satisfying enough. I’m making this as I type! I’ve made the version without onion & love it but this just sounds like a winner. I had everything in my fridge & pantry except the jiffy mix. I recently got a 5lb bag of Pearl Milling cornbread mix for $.97. It’s similar but has no sugar or fat in the dry mix which Jiffy does. Fortunately I found a make your own mix like the Jiffy & was able to adjust my mix to fit. This should be the perfect thing to go with baked chicken & roasted veggies. Thank you!
❤❤❤❤ Good question Melissa regarding the cream corn. Melissa since you like sour cream, I have something for you. 1. Take sour cream as much as you want. 2. Add regular sugar and stirr with the sour cream. (taste it as you go along for the sugar amount). Keep on stirring. Once is all combine add: 1 sliced banana OR fresh sliced strawberries as many as you want. Combine and enjoy. My grandmother ( rest in peace) in Mexico used to give us this for dessert. I am 79 and I still make this. Only make what you are going to eat. You can refrigerate the banana or sliced strawberries so that everything is cold. They didn't have YOGURT back then, so this was a special treat❤ Tom, don't make a face on this😅😂 If I am going to bake a cake or this delicious corn, I always start with the baking. We make this recipe but we use also put a sweet red pepper in it as well as cream cheese. Then we sprinkle cheddar cheese on top. Try it sometime, you might enjoy it. I love the red pepper in it!

Making this tomorrow along with my Eggplant Deluxe casserole and Deconstructed Green Bean Bundles. Now I will have something to eat on for several days. That way I don’t have to cook every day! Beets and tomatoes round out each meal. No meat!
@@princess_4323 Eggplant Casserole 2 eggplants, 2 eggs beaten, 1 cup sliced bread crumbs, 2 cups milk, 3/4 cup grated cheese, salt and pepper. Soak peeled and sliced (or diced) eggplant in salted water one hour. Drain well and rinse. Boil in water until tender and drain, Soak bread crumbs in milk. Add eggs and eggplant and salt and pepper to mixture. Stir. Add cheese if desired. Bake in a shallow buttered baking dish until firm, about 40 minutes at 350.
Just made this corn casserole. WOW!!! As good as it is as is we are going to try it with some diced jalapenos. Maybe some diced ham. We will let you know how these come out but the basic receipt is fantastic. Thank you, M. L. H.

We love corn like that. We usually freeze several bags of it in the summer. It's delicious and always a crowd favorite.

I love creamy corn casserole. My twin sister made this for our holiday meals. I lost her 9 years ago to breast cancer. I haven't made it since. But it is delicious.

I have made this so ,so man years I don't put onion but I put cheese like about /2 cup in the mix and right before it finish cooking I sprinkle another 1/ 2 cup on top just till it melts I appreciate your recipes I am a deep raised either lady from grandma to mom this is a casserole a corn pudding don't, Don have jiffy it have butter,sugar,eggs,vanilla but cream corn and whole kernel corn and not drained both r so,so good just my two cents but true

I make something like this but call it corn pudding. I double it and put in a 9x13 greased pan. I use an 8 oz softened cream cheese instead of sour cream. Fabulous!

Love this creamy corn casserole , always made it at my home back in the states, now we've moved from the U.S. and have been unable to find Jiffy mix.we never used onions or sugar, we did use cream cheese instead of sourcream. Yours looks delicious.thanks for sharing, and bringing back memories.
I have made this recipe before minus the onion. I just prepared a pan of this, and it's in my oven now (with the addition of the onion), and I am looking forward to having a bite, especially since I am hungry. I think you don't need to eat this with anything and that just eating it alone is satisfying enough. Thanks for reminding me about making this again and looking forward to more recipes to tempt the palate from you.

I’m making this as I type! I’ve made the version without onion & love it but this just sounds like a winner. I had everything in my fridge & pantry except the jiffy mix. I recently got a 5lb bag of Pearl Milling cornbread mix for $.97. It’s similar but has no sugar or fat in the dry mix which Jiffy does. Fortunately I found a make your own mix like the Jiffy & was able to adjust my mix to fit. This should be the perfect thing to go with baked chicken & roasted veggies. Thank you!

Melissa since you like sour cream, I have something for you.
1. Take sour cream as much as you want.
2. Add regular sugar and stirr with the sour cream. (taste it as you go along for the sugar amount).
Keep on stirring. Once is all combine add:
1 sliced banana OR fresh sliced strawberries as many as you want.
Combine and enjoy.
My grandmother ( rest in peace) in Mexico used to give us this for dessert. I am 79 and I still make this.
Only make what you are going to eat. You can refrigerate the banana or sliced strawberries so that everything is cold.
They didn't have YOGURT back then, so this was a special treat❤

If I am going to bake a cake or this delicious corn, I always start with the baking.
You are right Tom, while you are cooking the meal the cake is done and cold to be able to decorate.
So the entire meal is done plus dessert😅

We make this recipe but we use also put a sweet red pepper in it as well as cream cheese. Then we sprinkle cheddar cheese on top. Try it sometime, you might enjoy it. I love the red pepper in it!

2 eggplants, 2 eggs beaten, 1 cup sliced bread crumbs, 2 cups milk, 3/4 cup grated cheese, salt and pepper.
Soak peeled and sliced (or diced) eggplant in salted water one hour. Drain well and rinse. Boil in water until tender and drain, Soak bread crumbs in milk. Add eggs and eggplant and salt and pepper to mixture. Stir. Add cheese if desired. Bake in a shallow buttered baking dish until firm, about 40 minutes at 350.
