In Zelda they probably made those towers too tall or very tall in order to test various fall damages, puzzle possibilities, level design concepts or to see what the engine could take using those mechanics. (Speaking as a developer who tests in weird ways like this) love the content as always guys!!

The reason this happens in the Shrek game is because you fell out of the level, you fell out of the game, out of the disk. The disk is inside the game console so that's where you end up. It makes perfect sense and is a really really cool idea.
Another one that I like is in COD Black ops 3 zombies map Der Eisendrac. Zombies is always fill of easter eggs but one of them was obviously for a dev to show his family. You have to do a bunch of random things before you leave the first room to see a portrait of them in a heart.
Splitgate had the fps scene by the balls for like a month during covid if they could've figured out server issues faster we could still be talking about it imagine the stuff they could've worked on rather than working on fixing servers

There's a weird easter egg at the start of fallout 1 that doesnt seem to be mentioned anywhere. The music in the cave as you leave vault 13 has section of backwards talking. When reversed and cleaned up you can hear a womans voice whispering "I need to escape. I miss him again"
The main reason I play World of Warcraft Classic (and classic WOTLK) is to explore the original maps of the vanilla world... as a in-lore missionary... to put souls to rest at the hidden and very tough to get to shrines at the very edges of the map. Ashenvale is the most notorious one, as there's so many overgrown trails where mobs don't spawn and the game gets eerily quiet, sometimes the music will even completely cut out when approaching these lost tombs. Someone, somewhere, put a lot of time into the map, and with each expansion they start to "fade away" as if no one remembers them. But I do. And I'll be there. For the last rites.
Here's a secret kinda similar to the Luigi one: there's a secret demo for crash bash in spyro 3, and there's a cheat you can input in said demo to unlock the full game. Once there, in one of the boss fights the pictures at the top are placeholders that are Bart and homer Simpson.

This is to avoid these situations where they can cause the company trouble, and are very discouraged from sneaking in easter eggs with some pretty bad repercussions.

Best Easter Egg me and my sister both witnessed was actually in Mario Party (cant recall). They had a hide and seek game, where the characters would hid le in bushes and then a 4th player would try and guess where people hid. And me and my sister found an Easter Egg we could only trigger once, where Daisy and Donkey Kong of all people, when they hid together behind the same Bush and where both discovered together exclusively, when the Bush pulled away, they were making out with each other. I kid you not. Me and my sister lost our minds, we were like...6 and 8 years old. And played it like...100 more times to try and rejigger the damn thing...but couldn't manage to make it happen twice. I still wonder if anyone else has ever found that.
One of these easter eggs that comes to mind is the hidden car in the medieval fantasy game Gothic II. It's hidden outside the normal map and what makes it super weird is that it's a CAR wreckage in a fantasy game setting. No explanation as to why it's there.

It's Winter...for one thing all the places of power aren't active. Then there are these kind of floating red balls in a circles and they lead off asif there was some kind of quest and you had to follow them.......THEN in the chapel where you find the Viper school swords there's this big red box stuck in a door sayig 'DO NOT TOUCH THE MESH' lol Oh and big boulder looking stuff beind the same chapeI. I gotta give a shout out to xLetalis for all this and this lot was pointed out to him by another gamer.
