How to Make Portokalopita: Orange, Yoghurt and Filo Cake FULL

  • Full length video on how to make my favourite Greek cake: Portokalopita. Made by shredding filo pastry into tiny pieces, they are layered up with an orange yoghurt custard and baked. Drenched in a cool sugar syrup, the texture isn't disimlar to a lemon drizzle cake. Just a million times more delicious. Have a go, the ingredients list is below and the full recipe is in my book Taverna.
    Ingredients:
    - 2 oranges
    - 500g filo pastry
    - 400g caster sugar
    - 1 stick of cinnamon
    - 200ml olive oil, plus extra for greasing
    - 250g Greek yoghurt
    - 5 large eggs
    - 1 tablespoon baking powder
    - 1 teaspoon vanilla bean paste
    or extract

    Can you use the water you cooked the orange in for the syrup? In my head, this would either have a great orange taste or be bitter from the orange skin… 🤔

    Does using kataifi yield the same result, or does it need to be ripped instead of shredded?

    Hmmm, Cypriot style bread pudding. Never seen this before. I got to try it. But I'll be adding some Grand Marnier in my custard.

    Is the 400g of caster sugar for the cake and syrup? Or 400g only for the cake? Thanks
