Chinese chives, among other things like bean sprouts, are hard to come by here in Romania. I thought since chinese chives are also called garlic chives, maybe I can replicate the flavor with normal chives + garlic.
I have watched a lot of noodle videos and have to say your noodle were in and out of the wok very quickly compared to others, would be interesting to do a comparison.
I must say I’m not a massive noodle fan but that looked delicious. There is a slow cooked beef dish that I think is called Nam Lao Fan that restaurants like HK Diner in Soho used to cook…would like to see how it’s cooked, seemed to have lots of chewy gelatinous stuff in it too obviously aw well as beef.
Probably the most home achievable Chow Fun I've seen.

They are very different. In fact they have a garlic kind of aroma. I don't think there's a decent sub, but I may be wrong. Hope this helps 👍

1 tbsp light soy sauce
1 tbsp oyster sauce
1 tsp dark soy sauce
1 tsp sesame oil
½ tsp sugar
½ ladle chicken stock
