How to Cook Pinto Beans and Eliminate the Gas They Cause

  • Technique for making pinto beans more digestible by eliminating the element that causes gas, oligosaccharides ( indigestible sugar). Pinto beans are a good source of protein, a pretty good source of potassium and an excellent source of fiber. This method causes the sugars that are the offending element to leach out of the beans during the cooking and washing process. Thanks for watching. Comments are appreciated.

    This is the very first video I watched when I discovered this amazing woman a few years ago. I watched it again and was flooded with emotion and reminiscent joy. I miss her so much as so many of us do. I love how she says OLIGOSACCHARIDES😂 What a blessing she was to all of us . She made you feel like you were her personal friend, even though she didn’t even know I existed.🥰🙏✝️

    My grandmother is 104 years old and she said that the secret to her longevity is that she ate pinto beans almost everyday in her adult life. Cooked simply. Thanks for your informative demonstration!

      Love your story, Thomas. My great grandmother lived to be 104 and while I don't know everything about her diet, I do know that she loved to eat one chocolate as well as a piece of cake with milk poured over top. I named my daughter after her💕

    I tried the technique shown here and I noticed I don't have the hurting gas like I often have, even from the canned beans. I cooked up a 2 lb bag of pinto beans, mashed them with the immersible blender, used a portion of them for tonight's burritos and the rest were put in freezer bags, ready for the next burrito night! It is a long process, so I gambled and cooked enough for later. Thank you for keeping your mom's recipes on UA-cam

      Me too! Tried soaking overnight the other day with baking soda. Came out horribly after cooking till tender the next day. They smelled and were putrid! And they tasted like baking soda besides! The chickens wouldn't even go near em! Ugh...
      Gonna try this method soon! Sorry you had to go so I have to say thank you in memoriam. Bless you and yours.

    I'm a disabled veteran who had to have a total colectomy after a military injury and you saved my ability to enjoy one of my most favorite foods in my life. I've tried some many ways of cooking them and they were always intolerable for my digestion. Legumes are so healthy in many varieties and I lived on them alone many times, so thank you dearly for giving me back the gift of being able to tolerate these again!

      have you tried soaking the beans over night then using a pressure cooker? you have not had beans until you put them in a pressure cooker. the cook time is 1 hour 30 min it really does a great job for something i eat nearly everyday.

    In the 60's when I was a kid, Granny had me sort the beans like that on the table. then she would cook them up, make cornbread, with white cornmeal, fry some potatoes with onion, slice a tomato and cantaloupe. Man that was a meal to behold. Sometimes she would make some skillet fudge.

      My mother had me do that in the early 2000s I found it got very boring, we stopped being so thorough when I and later my younger brothers started eating more, we also got bigger pots and pans.

      Our adult son started the soak last night...ALL FIVE POUNDS! So I guess we'll be having pintos in one form or another for a LONG time! LOL. No problem though, because now I can use Mama Phyllis' recipe, wonderfully simplified, along with dumplins, which the whole family loves!

    Another trick my mom taught me was if you needed to add more water to your beans after they have been cooking is to boil the water , you want that added water to be equally or hotter , not just room or faucet temp.

    Phyllis! You are my new queen!!! I made a pot of pintos right after watching this video, using your method, and to my surprise, it WORKED!!!     My mother used to make chicken and dumpling soup when I was a kid and I loved the dumplings the best (from the chicken and veggies). I'm 57 now and I bought a bag of dried pinto beans at the store today and I've never made them before. Perfect time for this video. I love that she added dumplings to them.

    The older the pinto beans the darker they look in the package that is another reason to screen them prior to cooking and always remember to check the expiration date or BEST BY date. Thank you Mrs. Phyllis I will try your method today😋👩‍🍳💕

    Over 10 years ago I saw this video and searched for it today to learn how to cook pinto beans using the 3 cook/rinse method. I am changing my diet to a plant based diet that calls for beans as the main source of protein. My beans are on their final segment of cooking. I also added a piece of kombu, a seaweed which also eliminates bean gas. In cooking dry beans we avoid consuming the harmful compounds found in the linings of canned beans and we also can avoid salt in our beans if we wish.

    I treasure Phyllis's recipes and memories of her. This recipe or bean cooking method is so wonderful . Czechs and Germans prepare spaetzle in a similiar manner to dumplings. Spaetzle usually come as a pasta like dumpling or homemade as here in this video. Thanks for showing this again !

      I soak my dry beans in water, for two hours, with one tablespoon of salt, one tablespoon of baking soda and two tablespoons of flour.(any kind) Rinse well and they should cook done in just two hours. Eliminates the gas and speeds up dinner 👍

      Now they say the baking soda keeps you from absorbing the proteins in the beans. I wonder if they changed something in the baking soda?

      Michael Harren Meee THREE!! She is so calm and chill and seems to have a lot of great insights on life, so intelligent. She reminds me of my Nana and her recipes actually work. Being born in the Southwest and having lived in Texas for forty years, I've eaten my fair share and then some of pinto beans! I've never ever heard of pintos with dumplings, my family might revolt against me if I did, since in their opinion, dumplings are for either chicken or for apples!

    I'm goin to try it this way, but just a couple thoughts. Never pour boiling hot water down your drain, always turn on the cold water with it. That boil water "can" deform your PVC drain pipes. And second, never use hot water straight out of the faucet to cook with, hot water sits in a water tank and "could" have bacteria in it.
    Phyllis, you are a gem, my wife died several yrs ago and she was the cook, and she loved doing it. But I only learned how to use the micowave and so I can't cook the beans the way she did. With your way I believe I'll have me some good pinto's soon. Oh, and she used "smoked turkey legs" in her beans, minus the bones. But I am going to try the dumplins.

    Glad this worked for you Vonesh. I don't think I mentioned this on the video but once I fixed pinto beans and put 2 very large videlia onion into the pot about twenty minutes before they were done. They were so good I ate the whole pot over a period of about 4 hours. I just couldn't stop eating them. So every year when the videlia onion hit the market I fix pinto beans just so I can add a whole bunch of onion with the pinto beans. I always appreciate your comments. Phyllis

    I had a neighbor who was from Mexico. She said they eat beans for breakfast allot along with other times. She showed me how she cooked them and it was very interesting. I really liked her method. Never stop the cooking process once you start the cooking. Rinse well at the beginning and start the cooking. Always keep a pot of water on the stove boiling water and whenever the water boils down and gets low, add more boiling water....never cold or unboiled water. Keep on going till they are soft...then season however you want. Its worth a try and keeps the flavor also.

    My experience with pintos is the darker the older they are and you can boil them for hours and they don't get soft. Another thing I learned is how to save the beans when you forget you're boiling them and they burn. First thing is set the pot in cold water then scrape the burnt beans out into another pot fill with water and throw a peeled potato in it boil until they're soft and throw away the potato. I gaurantee you the beans won't have a burnt taste to them. If some are stuck to the bottom of the pot don't put them in with the others.

    Loved watching you mix your dumplin' dough! Reminded me of Mamaw when she made homemade biscuits in her dough bowl, a wedding gift hand carved by her father! I have that dough bowl today! ❤️

    being a diabetic myself, what i do know about how the body processes the bean, with the exception of a few,is that the body of a diabetic breaks down the bean like a complex carb without spiking the blood sugar levels and the fibers help maintain good blood sugar levels thus giving one the feeling of an energy boost.

      @@Murpheys. This is the truth, just remember to never combine beans with rice, always add a protein or vegetable side. If the beans are combined with rice, tortillas will make insulin spike. :)

    While the beans are boiling, just add a tablespoon of sugar in them at least 30 mins before getting done. The sugar will not only take the gas out of the beans but will also make you a thick gravy. This also works great with crockpot cooked beans too.

    Hey Phyllis some of my guest like the beans with that oligosaccharides in them and some of them dont. So I just rinsed the beans and boiled them. My Grandmother told me, God rest her soul, said to eat one slice of pineapple before you eat a bowl and one slice after and you wont get the gas. And it works! Thanks for your video, you're the best.

      rob good That may work bc of the bromelain (enzyme that digests protein) in the pineapple? It's concentrated in the "core"... the part some people discard bc it's too fibrous for many.

    *Baking soda is what my mom always used. Once the beans are boiling very hard (about 20 minutes after they're boiling very good) add 3 - 4 tablespoons of baking soda. Stir, stir, stir!! All of that foam, green & yellow colored foam, is the gas that's concentrated. Pour ALL of that water & foam out. Add NEW water. You can cook as usual, OR, do the process with the baking soda one more time. I always do it twice. Our family has NO PROBLEMS with gas, all thanks to my mom knowing how to get rid of that gas. Now, be sure to fix a big cast iron skillet of yellow cornbread. Oh, don't forget the sweet onion!!*

    Thank so much for showing us how to correctly stop the gas, I looked for years for a way to get the gas out of the beans, with no luck. so just stopped eating beans. and I love beans.       Even without soaking them overnight ? Just clean and rinse beans and toss in a potato ?
      Is the potato skin on or peeled ?

      Peel it and toss it in. After they're done, toss the potato in the garbage...DO NOT EAT! Lol! You will have horrible gas if you do. You can also use a couple of whole raw carrots the same way.

    Thank you for sharing this information! My grandmother taught me to do this as a child with all beans especially prior to canning or freezing. This process works and also expedites the cooking process. I have never cooked with dumplings what a great idea. Appreciate your time and friendly approach

    Mother nature intended for pinto beans to darken over time to a brownish color. However, it’s tougher selling a darker pinto bean than selling a brighter pinto bean when it comes to certain markets. When pintos are first harvested they are typically much lighter in color, but as the days + weeks + months pass pinto beans naturally darken due to exposure to light + heat + the natural elements.

      It seems the darker ones take a little longer to cook. I think it's because they are older and drier.

      I freeze my left over beans after I have looked the ones i'm eating, it keeps your beans from aging and drying out..

      My mom always made dumplings in our beans but her doughnut didn’t use a leavening in hers.the basic recipe was 1 1/2 Cup all purpose flour, 1/2 cup of milk and 1 egg. Though they were cooked like yours. I had never ever heard of anyone else putting dumplings in their beans. When we were in Germany landlord made spaetzle and dropped them by small tsp. Into boiling liquid and the recipe was similar to the spaetzle that is put through a sieve. We all loved the dumpling so we had to at least double the recipe. I will have to try your recipe the next time I fix beans and take a few and put your dumpling in and do a comparison. I have a feeling that I will like both. TFS My name is Phyllis also

    Tried the exact recipe. Worked out amazingly. i added some diced jalapeno peppers and added some red pepper flakes as i like my food a little on the spicy side. but the little dumplings turned out great and the beans were also nice and tender! thanks so much Phyllis

    Omg, I thought they was worms and would throw all of it out. Until age of 30 when my husband (who was a farmer when he was young through college) He laughed and said we can plant them and get plants to help cut cost of buying. He said the same it was the root. Boy I felt dumb. I grew up in CA and he grew up in TN where we reside now. His mom doesn't cook like she used to so he said her cooking isn't as good. So learning special little secrets that I had never heard of is so wonderful. Thank you! 😘🤗

    This happened to pop up couple days ago. I have tried different recipes for tastes and stop gas. As a three-year-old child my aunt made me sit at the table until I ate my lima beans. I ended up falling asleep and not eating the beans. But now that I am way older and the fact that beans are nutritious, I thought that there has to be a way to cook these things. I figured I would try this recipe, because this was a totally different recipe. I did the next day and I am so delighted! Not only did they taste good to me, there was no gas! I am sorry to just find out she passed away. I so wished I could have told her what she has done for me. She has given a gift that keeps on giving! May the Lord Bless her while is sleeps! Also bless her family!

    I just made this exactly as you instructed except at the start of cooking i added a chopped sauted onion, garlic an green pepper. And at the end some frozed green beans under the dumplings. I also used the entire bag of beans which made so much food. I could feed a small army with this pot of absolutely deliciousness bean stew. Wow. Thank you so much. My husband loved it.

    I love when I add to much buttermilk to the dumpling dough, because like you, I have to add more flour and that results in a lot more dumplings. Yummy!

    I'm amazed at all the explanation she gives. I never liked noodles because of the gooey texture. My grandmother made the biscuit like ones inside too but I didn't have the slightest idea what made the difference. Also the sugar thing, I've seen the method but not the explanation for it. Most people just say you do this instead of the soaking. It's just great to know.

    never heard of pintos and dumplings - but will be trying this - and will definitely be trying the boiling 3-times method to get rid of the gas problem. I usually soak mine over night but never just boil for a while the next day - cook until done - so I'm excited to try this. My sister tried once to put everything she ever heard of that would remove the gas from beans -and it still did not work. I will share this method with her too. Love dried beans - favorite is the great northern beans. Hey, just reading a few comments - has someone said this nice lady passed away? Hope not - but if so, I know she's in heaven with my friend JESUS.
