    At first I was really thinking that the rice and fruit would taste weird together, but adding the coconut milk and vanilla extra makes it sound waaaay more appealing. Definitely wanting to try it.

      Yeah, me too! I don't like mixing salty and sweet together, but this rice seems to go well with the fruits. And I'm glad it's dairy-free, cuz I'm lactose intolerant e.e

    I love how each fruit makes a good sweet replacement for typical sushi ingredients.
    Strawberry = shrimp
    pineapple = crab
    kiwi = cucumber
    mango = egg
    toasted coconut = sesame seeds
    blackberry = fish roe

    Just what I need! There is this mango coconut sticky rice that i just LOVE, now I will be having fruity coconut sushi to my galore. The best thing is, I can have dessert for breakfast legitimately

    Gem this recipe is so clever! I love it and totally have to try! I actually bought a sushi mat a while ago and haven't had a chance to try it out, so now is the time! This is a great lighter option for this time of year when we're trying to stay on track :) Also you look beautiful in that color!

    Hi Gemma, me and my mom made this today and Ik it's so good. The dip I made is strawberries with 2 raspberries processed and liquified. The roll was hard to do when mama kept pushing the sides making it break up xD thanks so much for the fruit sushi idea, it's cute. You can slice raspberries or blackberries in half and lay them on their side with banana or fruit of your choice in tiny rolls :)

    I'm quite certain that it was at least 30 some years ago that "Fruit Pizza" was very popular (and yummy) and they were showing up at most of the potluck dinners. I loved the fruit on those, but as I became more concerned with processed foods and sugar, I really didn't care for the sugar cookie dough "pizza crust" nor the canned, fruit nectar "pizza sauce" and never did find substitutes that I was happy with. When I came out looking for other recipes tonight, I was so very happy to see your "Fresh Fruit Sushi" video which I have added to a playlist and copied the recipe along with the URL. I'm really looking forward to making this and very grateful that you post so many of your wonderful recipes online - Thank you for your generosity!

    I've done fruit sushi :) edible rice paper makes a great substitute for nori wrappers and honeydew melon makes a great "wasabi" paste

    You should do this recipe that my mom used make when my sister and I were sick. Sweet rice? Milk sugar and rice. Microwave until rice is cooked. Good luck! Can you put a BIG AND BOLD twist on it? Like a comfort episode?

    This is such a wonderful idea! 1-2 times per year I cook a dish for a group of 32-36 people in a club & I'm always the one looking for dishes that IMPRESS & are unique. I prefer making the dessert & I'm totally making this one next time! I already make my own sushi at home, so I have the mat & rolling down.

    My friend and I tried this together and it was amazing!
    We used 2 cups of rice to 2 and a half of water in a rice cooker and didn't have vanilla essence so it was only the coconut milk, but it was still absolutely delicious and worked really well. Of all the flavour combos we tried my favourite was definitely peach, pineapple and strawberry :D We found banana was a too mushy a texture with the rice though to work well in any of our combos.

    Love this video! So fun! I make sushi for a living... A helpful tip is to actually wrap the plastic wrap around the sushi Matt. I usually wrap it three times. That way u don't have to fuss with it while rolling! 😊

    It looks amazing! And the way you cook the rice, here in Puerto Rico we made it almost like, that to make a disert called arroz dulce (sweet rice). And we put raisins inside. when the rice is cooking we put an amout of a "tea" of ginger, cinnamon and a spice of "clavo".

    Nice! There is a Thai treat that uses coconut flavoured rice with sliced mangoes and cashews, it is great too

    If you wrap your sushi mat completely with the cling film it makes it easier to roll. Keeps your mat clean also. Change cling film after you finish rolling. I manage a sushi restaurant and that's what the sushi chefs do.

    Okay, So I HAD to watch this a few times because my jaw was on the FLOOR! I've made regular sushi at home a few times, but dessert?!?!?!?!! THIS I HAVE TO TRY! Gemma, you done did it again. OH--And I literally just returned from the market. I picked up both active and fast acting dry yeast. I'm gonna try ALL of your magic dough recipes. NAAN!!

    I'm not sure what is sushi rice (and I'm Asian!) here in PH, but the last time I made some California Maki rolls, I used glutinous rice (for Filipinos: kaning malagkit) which is pure amylopectin. I'm going to try making them again vegetarian style! :D Never knew sushi could be made with only fruits... Though I love mangoes to go with it. Mmm...
